Another hint. Don't slice off any brisket till you're ready to serve it. If you slice a bunch early, it will dry out quickly.

My thumbnail discoloration is permanent. I crushed my thumb into 8 pieces at work, and the nail is, well, it is what it is. I'm just glad it grew back.
