I have also found a huge difference between rushing one to table. And allowing one to rest properly, even longer than people suggest. The ones that rest longer always taste betterThe rest period afterward is very important. The meat tightens up during smoking, and the juices go to the bottom of the foil wrap. The hour wait will allow the meat to relax and soak up those juices.

I have a designated cooler sitting right next to my smoker. And my wife has donated to me no longer used beach towels to wrap em.after you wrap it in foil, insert the sensor. pull it at around 199-200 degrees..wrap it in towels and put it in an ice chest to rest for an hour at least.
I love that smell...lolUse towels that you you can afford to lose, or just don't tell the wife. You will never be able to get that smoke smell out of them. Ever.
