Are you saying defendants should call the prosecution's bluff if they're offered a plea deal in exchange for testimony and cooperation against a "bigger fish" because such an offer somehow likely means the prosecution doesn't have sufficient evidence to convict them of the original charges against them?

They're offering them the plea deal because the prosecution doesn't have sufficient evidence to convict them of the original charges.

Why would someone spend hundreds of thousands of dollars in legal fees to avoid a nothing burger misdemeanor with zero jail time?

They are allowed to plead guilty to lesser charges in agreement to testify against Trump.
This is a very common tactic used in RICO cases against Mob Bosses.
Remember too, if you are convicted of a felony you cannot practice law in the state of Georgia.
