I've heard really good things about it. Especially for making fried chicken and steaks.
With a whole it can retain a ton of heat, so let it sit at room temp for about a half hour or 45 mins so it doesn't keep raising the internal temp. Hope it goes good brother.

I usually cover it in a foil pan with beef broth. Thought about trying the butcher paper though, just to see if it makes a difference.
Usually wrap in foil with beef broth. Also plan on injecting it with beef broth and tallow.
I've only done butcher paper once and that was with a pork butt.
