Sicilians make sauce a little thin which is harder to see but it's there, Italians make gravy which is thick and sits on top and more visible... Both ways are excellent with aldente pasta

My wife will start it about 8:00 to 9:00, sometimes with frozen tomatoes out of the garden. As that simmers, she'll make meatballs and brown them with some sausage. Into the sauce for most of the day at low heat and stirring now and then.

Rigatoni's or penne, some crunchy bread and a green salad. Freaking heaven!
