Lol it's all what you've grown up having. My moms whole side of the family mixes the yolks mustard and mayo with a fork. It's creamy with just tiny little chunks.
From the ones I've had people tend to over whip them smooth

Yeah, a friend of mine over whips hers too. I really don't like the texture. I mix mine just beyond the chunky stage. Mine might have a few small chunks, but not many. I put a splash of vinegar in also for a little kick.

when it comes to mayo or Miracle Whip I always use half of each....mac salad, potato salad, devilled eggs, etc.

I use vinegar and also HOT sauce........my mixing is done with a fork and squishing.
