Start your steaks on the indirect side and cook to about 120º. Then move to the direct side to get the caramelization on the outside.
The center of the cut is consistent this way.
Haven't tried it yet. I've been having such good success searing hot, then indirect to temperatures, that I don't want to mess with it. The "rules of three" have done me well, or medium rare.....
