Check the bottom of the outside bowl where the ashpan touches it. If you see rust starting, toss it.

Mine was five years old, and certainly served it's purpose. It was kinda sad scrapping it.

What kind a fish are them?

Southern flounder, and they are probably the best eating inshore fish around, IMHO. I got 20 filets (4 from each fish) we had them pan seared in butter and olive oil. Yum yum. Nothing better than fresh fish.
