Butcher paper makes better bark@cosmo1 what do you think is better. Wrapping in tinfoil or butcher paper? I have always used tinfoil when it gets to the stall but I bought some butcher paper for the next time I do a brisket and I'm thinking of using it on my pork butt tomorrow.
It lets some moisture out so it doesent steam like foil when it’s all sealed up
