@cosmo1 what do you think is better. Wrapping in tinfoil or butcher paper? I have always used tinfoil when it gets to the stall but I bought some butcher paper for the next time I do a brisket and I'm thinking of using it on my pork butt tomorrow.
Butcher paper makes better bark
It lets some moisture out so it doesent steam like foil when it’s all sealed up
