Temp will always drop when you first put stuff on. Cold food and opening the lid. Let that temp settle for 20 mins minimum and make adjustments with the top vent. Let the adjustment sit for 15 minutes minimum and see where it ends up. It’s hard to dry out any food in there it’s so sealed up.
I got that part. What I mean is my thermometer is reading 350° but when I touch the dome it's cold. Meaning all the ceramic inside hasn't soaked up the heat. So when I open it and put the food in it takes even longer to come back to temp.

Mine doesn’t have ceramic. Got the cheap-o Akorn. However, I’ve never grilled or smoked better food.

They don't looks as good as yours. Wish they were a little more crispy looking but they are done and taste great. Probably shouldn't have done indirect.
