Only in some locations. Where I am, it's OT after 5 no matter what. If you double, it's highly likely that one of your shifts, in its entirety, will be OT.

In the Southern, a sort could be run 3 1/2 hours, shut the belts off for a 30 min lunch or break, then run the sort another 3 1/2 hours, 7 total.
All paid at straight time.
We have guys triple shifting this month. OT after working 5 hours. Unless your are also driving as part of your job. I tell my boss I can make more money double shifting then driving package car at top rate.
