It's kind of like when you buy a crab cake at some places. It's been handled so much it looks like dog food. A REAL crab cake is made with few ingredients and handled as little as possible to keep big chunks of meat.

I grill the salmon then let it sit in the fridge overnight. Then the following day my wife breaks it up ,bread them and throw them in the frying pan.
