If the kids and their wives come tomorrow, I'm doing a couple tenderloins.

Kinda tricky to not overcook them because of the size and lack of fat, but done right, they freaking rock!

When you take them out of the smoker, put a slice or two of bacon on them then wrap them. Bacon will cure most dry pork issues.

I had them in my smoker for two hours but the smoker was running a little hot so I had to wrap and use bacon.
