Canadian Upside-Down Cake

Ingredients:

1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup granulated sugar
1 large egg, at room temperature
1/2 cup milk
1 cup pure maple syrup
1/2 cup walnuts, finely chopped



Directions:
Preheat the oven to 350?friend. Butter a 9-inch square baking pan. Sift the flour, baking powder, cinnamon, and salt into a medium bowl. Beat the butter, sugar, and egg in a large bowl with an electric mixer at medium speed until creamy. With mixer at low speed, gradually beat in the dry ingredients, alternating with the milk.

Bring the maple syrup to a boil in a small saucepan over medium-low heat. Stir in the walnuts and remove from the heat. Pour the walnut syrup into the prepared pan. Spoon large dollops of the batter over the top. Use a thin metal spatula to spread the batter; it will soften with the heat of the syrup.

Bake for 25-35 minutes, or until a toothpick inserted into the center comes out clean. Cool the cake in the pan for 10 minutes. Turn out onto a serving plate. Serve warm.

Mocha Cinnamon Pudding Cake

1/4 cup cocoa powder
1-3/4 cups sugar
1 cup all purpose flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 cup milk
2 Tbs. unsalted butter, melted
1 tsp. vanilla extract
1 cup hot brewed coffee

Preheat oven to 375°friend. Sift together half the cocoa powder, 3/4 cup sugar and next 3 ingredients in a bowl. Stir in next 3 ingredients. Mix thoroughly. Pour into an 8 or 9 inch baking dish. Combine remaining 2 Tbs. cocoa powder, 1 cup sugar and hot coffee in a separate bowl. Pour over cake batter and bake 35-40 minutes until a tester comes out clean when inserted in center of cake. Serve upside down.

C.O.P. Cookies

1 cup Crisco (softened)
1 cup brown sugar
2 cups flour
2 eggs (beaten)
1/2 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1 package chocolate chips
1 cup oatmeal
1 cup peanut butter
1/2 tablespoon vanilla

In large bowl, add all ingredients alternately and mix well. Using a teaspoon, drop dough on ungreased cookie sheet. Bake at 345 degrees for 10-12 minutes. Let cookies sit for 5-10 minutes - then, ENJOY :)!!

Vanilla Chip Maple Cookies

1 cup Shortening
2 teaspoon Baking soda
1/2 cup Butter softened
2 cups Vanilla chips
2 cups Brown sugar packed
1/4 cup Butter softened
2 Egg
4 cups Confectioners Sugar
1 teaspoon Vanilla
1 teaspoon Maple flavoring
1 teaspoon Maple flavoring
4 tablespoon Milk
3 cups Flour
3 1/2 cups Pecan halves
Instructions:

In a mixing bowl, cream the shortening, butter, and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla and maple flavoring. Combine the flour and baking soda; gradually add to creamed mixture. Stir in vanilla chips and pecans. Drop by rounded tablespoonfuls 2 in apart onto ungreased baking sheets. Bake at 350? for 8-10 mins or until golden brown. Cool for 2 mins before removing to wire racks. In a mixing bowl, cream butter, and confectioner's sugar. Beat in maple flavoring and enough mild to achieve spreading consistency. Frost cooled cookies. Top each with a pecan half.

Apple Bundt Cake

Ingredients


  1. 2 cups apples - peeled, cored and diced
  2. 1 tablespoon white sugar
  3. 1 teaspoon ground cinnamon
  4. 3 cups all-purpose flour
  5. 3 teaspoons baking powder
  6. 1/2 teaspoon salt
  7. 2 cups white sugar
  8. 1 cup vegetable oil
  9. 1/4 cup orange juice
  10. 2 1/2 teaspoons vanilla extract
  11. 4 eggs
  12. 1 cup chopped walnuts
  13. 1/4 cup confectioners' sugar for dusting

Cooking Directions


  1. Preheat oven to 350 degrees friend (175 degrees C). Grease and flour a 10 inch Bundt or tube pan. In a medium bowl, combine the diced apples, 1 tablespoon white sugar and 1 teaspoon cinnamon; set aside. Sift together the flour, baking powder and salt; set aside.
  2. In a large bowl, combine 2 cups white sugar, oil, orange juice, vanilla and eggs. Beat at high speed until smooth. Stir in flour mixture. Fold in chopped walnuts.
  3. Pour 1/3 of the batter into prepared pan. Sprinkle with 1/2 of the apple mixture. Alternate layers of batter and filling, ending with batter.
  4. Bake in preheated oven for 55 to 60 minutes, or until the top springs back when lightly touched. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Sprinkle with confectioners' sugar.
Yield: 12 servings

CHOCOLATE SURPRISE CUPCAKES

1 pkg devil's food cake mix
1 (8 oz) pkg cream cheese, softened
1/3 cup sugar
1 egg
1 cup semi-sweet mini chocolate chips

Preheat oven to 350. Prepare cake mix according to package instructions. Spoon batter into paper-lined muffin or cupcake pans, filling 2/3 full. Beat cream cheese and sugar at medium speed with an electric mixer until fluffy. Add egg, beating well. Stir in mini chocolate chips.

Spoon 1 heaping teaspoon cream cheese mixture into center of each cupcake. Bake for 25 minutes. Remove from pans and cool on wire racks. Store in refrigerator until dessert time! (The surprise is that the cream cheese mixture becomes a hidden filling inside the cupcakes.)

Wonder Magic Spice Cake

Ingredients:
2 1/4 cups all-purpose flour
1 cup sugar
1 1/4 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 cup Miracle Whip
1 cup cold water
1 cup raisins or dates -- chopped
1/2 cup nuts -- chopped



Directions:
Sift dry ingredients together in a large bowl. Then add Miracle Whip and cold water; mix well. Add the raisins and nuts.

Pour into greased 9x13" cake pan. Bake at 350 friend. for 35 minutes or until tests done.

Frost with cream cheese icing or your favorite when cool.

i have made this same recipe but i just buy milk chocolate iciing. take the foil paper off the top and replace lid and heat for 1 minute in the microwave then, pour over top.

Out-Of-This-World Cake

CAKE

1 (18 1/4 ounce) package yellow cake mix
1 1/4-1 1/3 cups water (see back of box for water amount)
1/3 cup vegetable oil
3 eggs

TOPPING

1 (20 ounce) can crushed pineapple
3 cups milk
1 (6 ounce) package instant vanilla pudding
1 teaspoon vanilla
1 (8 ounce) package cream cheese (softened)
12 ounces frozen whipped topping (thawed)
1 cup shredded coconut
1 cup chopped pecans or walnuts
  1. CAKE:.
  2. Prepare and bake cake according to directions on box for a 9x13 pan using the water, oil, and eggs in the boxed mix.
  3. Let sit for about 5-10 minutes and then pierce the top of the cake with a fork.
  4. TOPPING:.
  5. Pour the undrained pineapple over the baked layer.
  6. Mix the milk, pudding mix, and vanilla in a medium mixing bowl.
  7. In another medium mixing bowl beat the cream cheese at high speed till light and fluffy.
  8. Add the pudding mixture to this beating till smooth.
  9. Spread over the prepared layers.
  10. Top with whipped topping.
  11. Sprinkle with the coconut and pecans.
  12. Chill covered for several hours.

Great thread and I know it has been ongoing for 2 years now. I have been scanning them looking for some healthy,filling, stick to your ribs cookie or bar. Anyone? Since we are burning aprrox 150 calories an hour.

In a medium bowl, stir together peanut butter and marshmallow creme; spread over the crust in the pan. Crumble remaining cake mix mixture over top.3.Bake 20 minutes in the preheated oven. Cool, and cut into squares to serve.

Granola Bars


Ingredients:

1 egg
1/2 cup brown sugar
l tsp. vanilla extract
l cup granola
1/2 cup raisins (or any chopped dried fruit)
1/2 cup chopped hazelnuts (or your favorite nut)
1 1.69-oz. pkg. M&M's chocolate candies

Directions:

Preheat the oven to 350 degrees. Generously butter or oil an 8- x 8-inch square pan (preferably nonstick). Crack the egg into a medium-sized bowl. Add the sugar and vanilla extract and mix thoroughly.
Stir in the granola, raisins, hazelnuts and M&M's and mix until combined. Transfer to the pan and distribute evenly over the bottom, pressing firmly with your hands. Bake for 25 minutes. Cool and cut into bars or squares.

Lemony Cheesecake Squares

2 C. vanilla wafer crumbs
1/4 C. sugar
1/2 C. butter melted
3 (8 oz) pkg. cream cheese softened
1 (14 oz) can Eagle Brand Sweetened Condensed Milk (not evaporated milk)
3 eggs
1/2 C. lemon juice 3/4 C. strawberry preserves

Preheat oven to 375. Combine crumbs, sugar and butter; press firmly on bottom of 9x13 pan. Bake 8 minutes. Cool. Reduce oven temperature to 300. In large mixing bowl, beat cheese until fluffy. Gradually beat in condensed milk until smooth. Add eggs and lemon juice; mix well. Spread preserves evenly over prepared crust. Pour cheese mixture over preserves. Bake 45-50 minutes or until center is set. Cool. Chill. Refrigerate leftovers.

Chocolate Highlander Cookie Bars


1 cup softened butter
1/2 cup powdered sugar
1/4 teaspoon salt
2 cups flour
4 beaten eggs
1 cup melted butter, cooled to room temp
1 cup white sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup flour
2 1/2 cups chocolate chips (measure BEFORE they're melted)
1/3 cup powdered sugar, to sprinkle on top of the pan
  1. Preheat oven to 350.
  2. Cream butter with 1/2 cup powdered sugar and salt. Add flour and mix well. Pat it out in a greased 9x13 inch pan with your fingers.
  3. Bake at 350 for 15 minutes. Remove from oven. Do not turn oven off.
  4. Mix eggs with melted butter, and white sugar. Add baking ppowder, salt, and flour, and mix thoroughly.
  5. Melt the chocolate chips in a double boiler or microwave. Be sure to stir and that the chips are completely melted.
  6. Add the melted chocolate chips to your bowl and mix thoroughly.
  7. Pour this mixture on the top of the pan you just baked and tip the pan so it covers all of the shortbread crust. Stick it back into the oven and bake it for another 25 mintues. Then remove it from the oven and sprinkle on the additon powered sugar.
  8. Let it cool and cut into brownie-sized bars.
  9. You can refrigerate these, but cut them before you do.

Tres Leches Cake

flour & butter for greasing & dusting pan
4 eggs
1 cup butter, softened
1 cup sugar
2/3 cup milk
1 1/2 tsp. vanilla
3 cups cake flour
1/4 tsp. baking soda
1 Tbls. baking powder
1/2 tsp. salt
7 oz. fat free sweetened condensed milk
6 oz. fat free evaporated milk
12 oz. light whipped topping
optional: mixed fresh fruit

Preheat oven to 350. Grease & flour a 9x13 pan. In a large bowl, beat eggs, butter, sugar, milk and vanilla until creamy and well blended. In a separate bowl, combine flour, baking soda, baking powder and salt; stir to blend. Add dry ingredients to egg mixture. Mix to combine. Pour into prepared pan.

Bake in preheated oven 35-40 mins. or until cake is firm to the touch. Remove cake from oven and let cool 5 mins. Meanwhile, combine condensed and evaporated milk in medium bowl. Poke holes all around warm cake using a toothpick. Slowly pour milk mixture evenly over holes on top of cake. Let cake cool 10-15 minutes more to absorb the liquid. Cover and refrigerate cake in pan at least 1 hr. When cake is completely cooled, spread whipped topping evenly on top. Garnish pieces of cake with fruit if desired. Keep cake covered & refrigerated.

Easy Cherry Crumb Pie

1 9" pie crust
1 T. cornstarch
1 T. cold water
1 (21 oz) can cherry pie filling
1/2 C. quick cook oats
1/4 C. flour
1/4 C. brown sugar
1/4 C. butter

Combine cornstarch and water and stir until smooth. Add cherry pie filling and mix. Pour into pie crust. Combine oats, flour, brown sugar and butter and mix to create a crumbly mixture. Sprinkle over cherry pie and bake for 30-40 minutes at 350. Allow to cool before serving.

Granola Bars

Ingredients:

6 cups dry oats (quick-cooking or regular)
2 cups flour
2 1/4 cups brown sugar
1 tsp baking soda
3 sticks margarine, melted
3/4 cup honey

Directions:

Combine dry ingredients in large bowl. Add melted margarine and honey. Mix well and pat into a lightly sprayed 11" x 17" oblong baking dish. Bake at 350 degrees friend for 15 min.

Number of Servings: 40

Hungarian Poppy Seed Coffee Cake

1 cup butter
1 1/2 cups sugar
2 1/2 cups flour
1 teaspoon baking soda
2 teaspoons baking powder
1 cup buttermilk
1/4 cup poppy seeds
4 eggs (separated)
1 teaspoon vanilla

Filling



2 teaspoons cocoa
1/3 cup white sugar
1 teaspoon cinnamon
  1. Soak poppy seed in buttermilk for twenty minutes.
  2. Cream butter and sugar, add egg yolks, vanilla and beat well.
  3. In separate bowl - the flour, baking soda and baking powder using a whisk to mix).
  4. Add the dry ingredients alternately with the buttermilk/poppy mix.
  5. Beat eggs, fold in the stiffly beaten egg whites
  6. In a greased angel food pan (I use a bundt pan) spread batter in layers sprinkling each layer with the sugar/cocoa/cinnamon mix and swirl with a knife.
  7. Bake one hour at 350 degrees or until toothpick come out clean.

Italian Love Cake

1 package of Duncan Hines Devils Food or Marble cake mix
4 Eggs 2 pints of Part-skim Ricotta Cheese
1 box of Instant Chocolate Pudding
1 cup of Sugar
1 cup milk or Heavy cream
1 teaspoon Vanilla Flavoring
1 container frozen whipped Topping thawed
Instructions:

Prepare cake mix as directed on the box. Pour the batter into 9 x 13 x 2 inch greased baking dish. Set this aside.
Combine ricotta cheese,sugar,vanilla and eggs. Blend well. Spread the mixture evenly on top of the cake mixture.
Bake at 350 degrees for 55 minutes to 60 minutes.
Blend Pudding mix and milk until thickened then fold in the whipped cream. Spread over cooled cake.

Crisp topping for fruit
This topping goes with any fruit that can be made into a pie. I for one think making piecrust is a lot more work than it is worth. The store-bought piecrust is near cardboard in texture and taste. So what is a mother to do?
In my case I obtain a can of pie filling and go from there. The topping is very simple.
The regular recipe calls for:
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 stick of butter (half cup), melted butter
  • A sprinkle of salt
Put the butter on to melt. Don't scorch it; take your time. [If you start the butter before you start measuring the rest of the ingredients, it will be melted about the right time.]
Mix the first three ingredients well, and add the sprinkle of salt. Work in the melted butter until everything is coated. [If there are any lumps in the brown sugar, break them up or they will scorch in the cooking process.]
Put your fruit in a baking dish or pan. [If using fresh fruit do it just like you were making a pie. Canned filling, just dump it in.] Sprinkle on the topping evenly. You want just enough to cover all the topping.
Bake in preheated 375°friend oven until topping is brown and filling bubbling. It will probably take 15 or 20 minutes.
