Banana-Cream Cheesecake

1 pkg.(2 layer size) white cake mix, divided
4 eggs, divided
3 Tbls. oil
2/3 cup packed brown sugar, divided
2 bananas, sliced
2 pkg. (8 oz. each) Philadelphia Cream Cheese, softened
2 Tbls. lemon juice
1 1/2 cup milk
1 1/2 cups thawed Cool Whip

Heat oven to 300 degrees. Reserve 1 cup dry cake mix. Mix remaining cake mix with 1 egg, oil and 1/3 cup brown sugar with mixer. Mixture will be crumbly. Press onto bottom and one inch up sides of greased 13 x 9 inch baking pan; top with bananas
Beat cream cheese and remaining sugar with mixer. Add reserved cake mix, remaining eggs and lemon juice; beat one minute. Blend in milk. Batter will be thin. Pour into crust. Bake 45-50 mins. or 'til center is almost set. Cool. Refrigerate 4 hrs. Top with whipped topping. Refrigerate leftovers.

Brown Sugar Shortbread

1/2 cup butter, softened
2/3 cup firmly packed dark brown sugar
1/2 tsp. vanilla extract
1 1/4 cup all purpose flour

Preheat oven to 325 degrees. Lightly grease a 9" square baking pan; dust with flour. In a
bowl, combine soft butter and brown sugar; beat 'til fluffy and well mixed. Blend in vanilla.
Gradually add flour until it is completely absorbed (dough will be rather stiff). Pat dough
evenly & firmly into a smooth, even layer in prepared pan. Bake until top feels firm when touched gently and edges pull away from sides of pan (30-35 mins.)
Let cool in pan on wire raxk for about 10 mins. Cut while warm into squares.

Buttermilk Brownies

2 cups all purpose flour
2 cups sugar
1 tsp. baking soda
1/4 tsp. salt
1 cup butter
1/3 cup unsweetened cocoa powder
2 eggs
1/2 cup buttermilk
1 1/2 tsp vanilla
choc. frosting

Preheat oven to 350 degrees. Grease a 13 x 9 inch baking pan; set aside. In a medium bowl combine flour, sugar, baking soda, and salt; set aside. In a saucepan, combine butter, cocoa powder and 1 cup water. Bring mixture just to boiling, stirring constantly. Remove from heat. Add cocoa mixture to flour mixture. Beat with an elec. mixer on med. speed 'til combined. Add eggs, buttermilk and vanilla. Beat for 1 min. ( batter will be thin) pour into prepared baking pan.

Bake about 35 mins. or until wooden toothpick inserted in center comes out clean.

When cooled, frost with your favorite choc. frosting.

Cranberry Apple Crisp

4 large apples (peeled and cut into 1/2 inch slices)
1 cup fresh cranberries
3/4 cup brown sugar, firmly packed
1/2 cup flour
1/2 cup oats
3/4 tsp. cinnamon
3/4 tsp. nutmeg
1/3 cup softened butter

Preheat oven to 375 degrees. Butter a 9" square baking pan. Place apple slices
and cranberries in pan. Mix remaining ingredients well and sprinkle over fruit.
Bake for 30 mins. Serves 6.

Boston Cream Pie

1 round yellow cake layer (8 or 9 inch)
1 cup cold milk
1 pkg (3.4 oz.) Jello vanilla flavor instant pudding & pie filling
1 1/2 cups thawed Cool Whip
1 square Baker's unsweetened baking chocolate
1 Tbls. butter
3/4 cup powdered sugar
2 Tbls. cold milk

Cut cake layer into 2 layers with a serrated knife. Beat 1 cup milk and pudding mix with whisk 2 mins. Stir in whipped topping. Let stand 5 mins.
Stack cake layers on serving platter, spreading pudding mixture between layers.
Microwave chocolate and butter on high 1 minute. Stir until chocolate is melted. Add sugar and 2 Tbls. milk; mix well. Spread over cake. Refrigerate 1 hour. Refrigerate leftovers.

Pumpkin Pecan Bread

2 cups flour
1 1/2 cup sugar
1 cup whole wheat flour
1/2 cup brown sugar
2 tsp. pumpkin pie spice
1/2 tsp. salt
2 tsp. baking powder
1/2 tsp baking soda
2 eggs
15 oz. canned pumpkin
1/2 cup vegetable oil
1/2 cup water
1 tsp. vanilla
1/2 cup chopped pecans

Preheat oven to 350 degrees. Combine dry ingredientys in a bowl; set aside. In another bowl, stir together the eggs, pumpkin, oil, water and vanilla; mix well. Stir into the dry ingredients just until moistened. Fold in pecans. Pour batter into 2 well greased 8x4 loaf pans. Bake for 55-60 mins until toothpick omes out clean. Cool 15 mins; remove from pans and cool completely on wire racks.

Creamy Lemon Cheese Pie

3 eggs, separated
1 (14 oz) can sweetened condensed milk
1/2 cup lemon juice
1 (8oz.) cream cheese, softened
1 - 9" graham cracker pie crust
1/4 tsp. vanilla
1/4 tsp. cream of tartar
5 Tbls. sugar

Beat egg yolks; stir in milk, lemon juice and cream cheese. Mix until you get the lumps out. Then pour into a graham cracker crust.
Meringue topping: Beat egg whites, vanilla, cream of tartar and sugar. Add the sugar 1 Tbls. at a time so it gets fluffy. Bake for 10-12 mins at 350 degrees.

This is amazing, but actually tastes like candy when done !!

Saltine Candy

1 cup light brown sugar
1 cup butter (2 sticks)
40 saltine crackers
1 pkg. (12 oz.) chocolate chips
1 cup chopped nuts (your choice)

Preheat oven to 350 degrees. Spray 10 x 15 inch rimmed baking sheet with Pam. Line
saltine crackers along bottom of pan. In a small pot, melt butter and sugar over med. heat (do not boil).
Pour mixture over saltine crackers. Bake for 10 mins.

Remove crackers from oven. Sprinkle choc. chips over crackers. Wjen chips are almost melted, use spatula to spread over crackers. Sprinkle nuts over chocolate.

Refrigerate until firm, about 2 hours. Cut into squares before serving.

Agnes's Velvet Mocha Pie

Ingredients 1 8-inch pie shell
------------PIE FILLING-----------------
1/2 c Butter
3/4 c Sugar
1 Square unsweetned chocolate, melted
1 ts Vanilla
1 1/2 tb Instant coffee grounds
2 Eggs
1/2 c Cream for whipping

Instructions 1. Prepare 8-inch pastry shell.

2. Cream butter in medium-size bowl and gradually add sugar, creaming well after each addition.

3. Cool melted chocolate; blend into butter-sugar mixture with instant coffee and vanilla.

4. Add eggs, one at a time, beating VERY WELL after each addition. (Use an electric beater or mixer, for you'll need to beat in each egg 5 minutes to make mixture creamy, thick, and fluffy.)

5. Turn into baked pastry shell; chill 1 - 2 hours. Just before serving, whip cream and garnish pie.

Applesauce Peanut Butter Squares

Ingredients
1/4 c Butter Or Margarine; Softened
1 c Granulated Sugar
3/4 c Peanut Butter
1 lg Egg
1 1/4 c Unbleaced All-Purpose Flour
1 ts Baking Soda
1/2 ts Ground Cinnamon
1/4 ts Ground Nutmeg
1 c Applesauce

Instructions
1. Cream the butter. Gradually add the granulated sugar, blending well. Add the peanut butter and egg and blend well.

2. Combine the flour, baking soda, salt, cinnamon and nutmeg, mixing well. Add to the creamed mixture alternately with the applesauce.

3. Pour the batter into a greased 8-inch square pan. Bake in a preheated 350 Degree friend. oven for about 40 minutes or until a wooden pick inserted in the center comes out clean.

4. Cool, in the pan, for 10 minutes and cut into squares.

Well, here's somewhere I've never posted before! I've decided to fill-in in my friend Morelucks absence (well, today anyhow!)

Chocolate Chip Muffins

Mix together:
1/4 cup sugar
1/4 cup soft shortening

Blend in:
1 egg

Mix together:
1 3/4 cup flour
4 tsp baking powder
1/2 tsp salt

Stir in with 1 cup of milk.

Don't forget the chocolate chips!!!

375 degree oven (How to you type a lil degree circle???) 20 - 23 minutes

Nice job over9five, those look good! Here's one that may come in handy.

Chicken Soup for the Belly

2 to 3 pound fryer
49 ounces chicken broth
2 to 3 quarts water
2 or 3 carrots
3 celery stalks
12 peppercorns
1/2 cup chopped scallions
1/2 cups frozen peas
4 to 6 ounces uncooked pasta (thin noodles or pasta rings)
fresh cilantro (optional)
turmeric (optional)

<H3>Morning Prep

</H3><H3>Clear out the inside of the fryer removing all the chicken parts (neck, heart, gizzards, and liver). Rinse the chicken inside and out under a cold running faucet. Place the chicken and all the parts except for the liver. inside the crock pot and heat on the low setting. Toss out the liver or give it to your cat as a special treat.

Evening Prep

  • Take the cooked chicken and its parts out of the crock and place on a plate to cool.
  • Dice or slice the vegetables (carrots, celery, and scallions).
  • Drain the stock from the crock pot into a large cooking pot.
  • Add additional can of stock and water. Set burner to low to medium heat.
  • Toss in the carrots, celery, and peppercorns, cover the pot.
  • Remove the skin from the cooled chicken, separating the meat away from the bones and any grizzle.
  • Cube the chicken into bite size pieces.
  • Add uncooked pasta and cubed chicken into the pot simmering on the stove top.
  • Add more water as needed.
  • Add the peas and scallions during the last 15 minutes of cooking.
  • Ladle soup into serving bowls.
  • Garnish with freshly chopped cilantro and a sprinkling of turmeric.

Hello baking fans! It's me, CHEF9FIVE, filling in on DAY TWO of Morelucks absence!!!

Today we will be making CONGO SQUARES, one of my favorite deserts!

1 box of brown sugar
2/3 cup of Crisco
3 eggs
2 3/4 cups flour
2 1/2 tsp baking powder
1/2 tsp salt
1 small pkg chocolate morsels

Grease cookie sheet. Cut in squares (hence the name) when done.
350 degrees (still don't know how to make that lil degree circle) for 25 minutes.

Cheeze in the oven
Preheat the oven to 400 degrees

Take 4 slices of white bread and spread a thin layer of cheeze whiz on them.

Bake for 2-3 min or until golden brown.

These are for the dogs - amazing how much they love them! I don't even bother to make fancy shapes. Just take a pizza cutter and make little squares.

Cheesie Bites Dog Treats

  • 1 cup wheat flour
  • 1 cup grated cheddar cheese
  • 1 tablespoon soft butter or margarine
  • 1/2 cup milk
Mix flour and cheese together. Add the softened butter. Slowly add milk till you form a stiff dough. You may not need all of the milk. Knead on floured board for a few minutes.
Roll out to 1/4 inch thickness. Cut into shapes and place on ungreased cookie sheet. Bake 350 degrees oven for 15 minutes. Let cool in oven with the door slightly open till cold and firm. Refrigerate to keep fresh.

Cocoa Cake

2/3 cup butter
1 2/3 cup sugar
3 eggs
2 cups flour
2/3 cup cocoa
1 1/4 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt

Cream butter, sugar & eggs until fluffy; beat with mixer on high 3 mins; reduce to low. Combine flour, cocoa, baking soda, baking powder and salt. Add alternately with 1 2/3 cup milk to creamed mixture. Pour into 2 greased & cocoa dusted 9" cake pans. Bake at 350 for 35 mins or 'til toothpick comes out clean. Cool 10 mins. then remove from pans.

Cocoa Fudge Frosting

1/2 cup creamed butter and 1/2 cup cocoa. Slowly add 3 2/3 Cup powdered sugar 7 Tbls milk and 1 tsp. vanilla

Beat to spreading consistancy. Frost cake when it's completely cooled.

Wish Star Chocolate Cookie

Shortbread:
2 cups flour
1 cup unsalted butter, room temp.
1/2 cup sugar
1 bar (4 oz.) Ghirardelli 60% Cacao Bittersweet Choc. Baking Bar, chopped
1 tsp. vanilla
1/4 tsp. salt

Dipping:
1 bag (11.5 oz) Ghirardelli 60% Cacao Bittersweet Choc. Chips
1 Tbls. butter

Melt baking bar in double boiler and set aside. Mix flour and salt together and set aside. In a large bowl, beat butter and sugar until smooth. Add melted chocolate and vanilla. Add flour mixture to choc. mixture and mix just until blended. Wrap dough in plastic wrap and chill for at least 1 hour. Heat oven to 359. Line Baking sheets with parchment paper. On a lightly floured board, roll dough to 3/8 inch thick and cut with cookie cutters. If the dough is very soft, chill again for 30 mins. Bake for 7 to 9 mins. Cool completely in pan.

Melt choc. chips with 1 Tbls. of butter in double boiler. Dip cooled cookie in melted chocolate mixture and let choc. set. Makes about a dozen cookies.

Andies Candies Cookies Makes approx. 10 dozen Anonymous\

Ingredients:
3/4 cup butter or margarine

1 1/2 cup brown sugar
2 Tablespoons water
2 eggs
2 cups chocolate chips
2 1/2 cup flour
1 1/4 teaspoon baking soda
1/2 teaspoon salt
3 boxes Andes candies



Directions:
In sauce pan over low heat, melt butter; add sugar and water. Then add chocolate chips. Stir until partially melted. Remove from heat; stir , then cool for 5 minutes. Add eggs and dry ingredients; mix with a mixer on low speed until blended. Chill 1 hour. Make into little balls and bake on an ungreased cookie sheet at 350 degrees for 10-13 minutes. While still hot, put Andies candy mint on each cookie, let it get soft then swirl mint with spoon. Cool on baking rack.

Orange Brownies




SERVES 16
  • 1/2 cup butter or margarine
  • 1/4 cup baking cocoa
  • 2 eggs
  • 1 cup sugar
  • 3/4 cup all-purpose flour
  • 1/2 cup chopped pecans
  • 2 tablespoons orange juice concentrate
  • 1 tablespoon grated orange peel
FROSTING

  • 1 1/2 cups confectioners' sugar
  • 3 tablespoons butter or margarine, softened
  • 2 tablespoons orange juice concentrate
  • 1 tablespoon grated orange peel (optional)
  1. In a small saucepan, melt butter. Stir in cocoa until smooth. Remove from the heat. In a bowl, beat eggs until frothy. Without stirring, add the sugar, flour, pecans, orange juice concentrate, peel and salt. Pour cocoa mixture over the top; mix well. Transfer to a greased 8 inch square baking pan.
  2. Bake at 350 degrees for 28-32 minutes or until edges begin to pull away from sides of pan. Cool completely on a wire rack. For frosting, combine confectioners' sugar, butter and orange juice concentrate; mix well. Spread over the brownies. Cut into bars; garnish with orange peel if desired.
