Here's my traditional Pumpkin Cookie Recipe:


Pumpkin Cookies

Beat together:

1 c. sugar
1 c. crisco

Add:

1 c. pumpkin
1 egg
1 tsp vanilla

Stir in mixture of:

2 c. flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt

Fold in:
1 c. chopped walnuts
1 c. raisins (or dates)

Drop by heaping tablespoonfuls onto sprayed cookie sheet.
Bake 10-12 minutes in preheated 350 degree oven.

Makes approximately 40 cookies.

Ingredients

    • 1/2 cup butter, softened
    • 4 ounces cream cheese, softened
    • 1 cup flour
    • fruit preserves
Directions

  1. Combine butter and cream cheese in large bowl; beat until smooth and creamy. Gradually add flour to butter mixture, blending until mixture forms soft dough. Divide dough in half; wrap each half in plastic wrap. Refrigerate until firm. Preheat oven to 375. Roll out dough, ½ at a time on a floured surface, to 1/8 inch thickness. Cut into 3 inch squares. Spoon 1 teaspoon preserves in center of each square. Bring up two opposite corners to center; pinch together tightly to seal. Fold sealed tip to one side; pinch to seal.
  2. Place 1 inch apart on ungreased cookie sheets. Bake 10-15 minutes or until lightly browned.

About This Recipe
"This is a German Apple Pancake that you make on a cookie sheet/jelly roll pan in the oven. It's quick, easy, and disappears pretty quick, so if you're making it for more than a few people, plan on making another as soon as the pan is empty."

Ingredients

    • 4 eggs
    • 1 cup flour
    • 1 cup milk
    1/2 teaspoon salt
  • 1/4 cup butter
  • 4 -5 medium apples ( thinly sliced)
  • 1/4 cup sugar
    • 1/4 teaspoon cinnamon
Directions

  1. Preheat oven to 400°friend Put 10" x 14" pan (with lip) in oven. Beat eggs, flour, milk, and salt. Remove pan from oven, put butter in pan and tilt to coat bottom and sides of pan with butter. Put sliced apples in pan and spread out to cover pan bottom. Pour batter over apples very slowly and evenly, trying to cover all of the apples with some batter. Sprinkle with cinnamon-sugar mixture. Bake 20-25 min at 400°friend. Remove from oven, cut into 8 or 10 slices, and transfer to plates with broad spatula.
  2. My grandmother likes hers sprinkled with lemon juice and dusted with powdered sugar. I think it's good both ways. It's also good cold.

Chocolate Caramel Poke Cake

Ingredients:

1 box chocolate cake mix
1 can (14 oz. size) condensed milk
1 can (14 oz. size) caramel topping
1 container (8 oz. size) nondairy whipped topping

Directions:
Mix the condensed milk and the caramel together.

Prepare the cake as instructed on the box. Remove cake from the oven when done and poke holes in the top of the cake and pour the caramel mixture over the cake while cake is still hot.

Refrigerate overnight and when ready to serve, top with whipped topping.

I made this for breakfast this morning and it was yummy !!! Definitely 'a keeper'.

Apfelpfannkuchen

4 eggs
1 cup flour
1 cup milk
1/2 tsp. salt
1/4 cup butter
4 med. apples (thinly sliced. I used my box grater to slice them)
1/4 cup sugar ( I used Splenda)
1/2 tsp. cinnamon

1. Preheat oven to 400 degrees. Put a 9x13 cake pan in oven to heat.
2. Beat eggs, flour, milk and salt.
3. Remove pan from oven, put butter in pan and tilt to coat bottom and sides of pan with butter.
4. Put sliced apples in pan and spread out to cover the pan bottom.
5. Pour batter over apples evenly and slowly, tring to cover all of the apples with some batter.
6. Sprinkle with sugar/cinnamon mixture.
7. Bake 20-25 mins in 400 degrees.
8. Remove from oven, cut into 8 pieces and serve.

Sprinkle with powdered sugar if you like. It's also good cold.

PEANUT BUTTER PUMPKIN DIP

INGREDIENTS:

1 cup canned pumpkin

3/4 to 1 cup brown sugar

1 cup peanut butter

1 teaspoon vanilla extract

INSTRUCTIONS:

Place ingredients in a bowl and mix well. Enjoy this dip with apples or pear slices or on saltine crackers.

Lemon Spritz Cookies

Ingredients:
1 cup shortening
3/4 cup granulated sugar
1 large egg
2 cups sifted or stirred all purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon pure lemon extract

Directions:
Preheat oven to 400 minutes friend.

Cream shortening, gradually add sugar; cream well. Beat in egg & extract. Sift or stir together flour, salt, baking powder. Gradually add to sugar mixture.

Drop from teaspoon on ungreased cookie sheet. Bake 10-12 minutes at 400 degrees friend.

Mini Italian Biscuits

Ingredients:

2 cups buttermilk baking mix
1/2 cup cheddar cheese -- finely shredded
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
2/3 cup milk

Directions:
In a bowl, combine the baking mix, cheese ,garlic powder, oregano and basil. With a fork, stir in milk, just until moistened.

Drop by rounded teaspoonfuls onto a lightly greased baking sheet. Bake at 450 degrees friend. for 7-8 minutes or until golden brown. Serve warm.

Substitute Splenda for the sugar and it's a pretty good plain cake or cup cake for diabetics

Simple White Cake

Ingredients

1 cup white sugar
1/2 cup butter
2 eggs
2 tsps vanilla extract
1 1/2 cups all purpose flour
1 3/4 tsps baking powder
1/2 cup milk



Preparation

Preheat oven to 350 degrees. Grease and flour 9x9 pan or line muffin pan with paper liners. In medium bowl, cream togehter the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine the flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan. Bake for 30 to 40 minutes in preheated oven. For cupcakes bake 20 to 25 minutes. Cake is done when it springs back to the touch.

Moist, Tender Spice Cake

Ingredients:

2 1/2 cups bleached all-purpose flour
1/4 cup cornstarch
4 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon each: ground nutmeg, allspice and cloves
1 cup milk
3 large eggs
2 teaspoons vanilla extract
16 tablespoons unsalted butter, softened until easily spreadable
2 cups dark brown sugar

Directions:
Adjust oven rack to middle position and heat oven to 350 degrees friend. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan.

Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.

Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth.

Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.

Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.

Sweet Potato Muffins

2/3 c mashed sweet potatoes
4 TB butter (or part oil)
1/4 c. sugar
2 TB molasses
2 TB honey
1 egg
3/4 c. whole wheat flour
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/2 c. milk
1/4 c. chopped walnuts
1/4 c. raisins
1/2 c. coconut

Topping:

1/4 c. sugar
1 tsp cinnamon

Cream butter, sugar, molasses and honey. Stir in sweet potatoes and egg. Sift dry ingredients together and add alternately with milk. Fold in nuts, coconut and raisins. Don't overmix. Spoon into greased or lined muffin tins. Combine topping ingredients and sprinkle on top of muffins. Bake at 400 degrees 25 minutes or until done. Makes 2 dozen.

Bran Muffins

3/4 c. milk
3/4 c. bran cereal
1 egg
1/4 c. oil
1/4 c. molasses or honey
1/4 c. firmly packed brown sugar
1 c. uncooked oats
2/3 c. all purpose flour
1 TB baking powder

1/2 c. raisins, blueberries, nuts, dates, or chopped apple--or combination--(optional)

Combine milk and bran cereal. Add egg, oil molasses and brown sugar. Combine remaining ingredients and mix in, stirring just until moistened. Fold in optional ingredients if desired. Fill 12 greased or paper-lined muffin cups 2/3 full. Bake at 400 degrees 15 mins.

Cranberry Streusel Coffee Cake

Ingredients:

***CAKE BATTER***

1 1/2 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter, softened
1/4 cup sugar
2 teaspoons grated orange rind
2 eggs
1/2 cup milk

***STREUSEL***

1/2 cup light brown sugar
1/4 cup flour
1/2 teaspoon cinnamon
2 tablespoons butter, softened
1/2 cup chopped walnuts

***CRANBERRY FILLING***

1 1/2 cup fresh or frozen cranberries
1/4 cup sugar
2 tablespoons orange juice

Directions:
Preheat oven to 350 degrees friend. Grease and flour 8-inch square cake pan.

Stir together flour, baking powder and salt on piece of wax paper until well mixed.

Cream together butter, sugar and orange rind in large bowl. Add eggs one at a time, beating well after each addition. Stir in flour mixture alternately with milk, beginning and ending with flour. Set batter aside.

For Streusel: Combine all streusel ingredients in small mixing bowl. Mix together with fork until crumbly. Set mixture aside.

For Cranberry Filling: Place all ingredients in small saucepan. Cook over medium heat, stirring constantly, until berries pop. Remove from heat; cool to room temperature.

Spread half of the coffee cake batter over bottom of prepared pan. Sprinkle with half of the streusel mixture; spoon on half the cranberry filling. Cover with remaining batter, sprinkle with remaining streusel.

Bake 50 to 60 minutes until toothpick inserted in center comes out clean. Cool on wire rack. Serve warm or at room temperature.

Oatmeal Chocolate Raisin Cookies

Makes: 32-35 cookies

Ingredients

1/2 tsp. Baking Soda
1 tsp. Ground Cinnamon
1 tsp. Baking Powder
1 cup White Whole Wheat Flour
1/2 tsp. Salt
1 cup Brown Sugar, packed
1/4 cup Cabot Greek Style Lowfat Vanilla Bean Yogurt
2 Tbsp. Pompeian Light Tasting Olive Oil
1 Large Egg
1 tsp. Pure Vanilla Extract
1-1/3 cups Old-Fashioned Quaker Oats
1 cup Nestle Dark Chocolate Raisinets

Instructions

Preheat oven to 350°friend. Cover 2 baking sheets with parchment paper; set aside. In a small bowl, combine flour, baking powder, cinnamon, baking soda and salt; set aside. In a large bowl, combine brown sugar, yogurt, olive oil, egg and vanilla. Add flour mixture and stir thoroughly until a dough forms. Stir in oats and Raisinets® . Drop by rounded tablespoonfuls, 2 inches apart, onto prepared cookie sheets. Bake for 10-12 minutes until lightly browned. Transfer gently to cooling rack and cool before storing.

Date Quick Bread

2 1/4 c. whole wheat flour
2 tsp. baking soda
1/2 c. dates
2 c. plain yogurt or buttermilk
3/8 c. molasses

Combine flour and baking soda. Stir in dates. Combine yogurt and molasses. Stir into flour mixture. Place into greased 8 1/4"x 4 1/4" loaf pan. Bake at 350 degrees for 1 hr. until brown and baked through. ( 325 degrees if using glass pan)

Banana Date Nut Bread

Stir together:

1 3/4 c flour
2 3/4 tsp baking powder
1/2 tsp salt

Cream together:

1/3 c crisco
2/3 c sugar
2 eggs

Stir in:
1 c mashed bananas (about 2 medium)

Add flour mixture. Then stir in

1 c. chopped dates
1 c. chopped nuts

Bake in sprayed loaf pan at 350° for 60 to 70 minutes, or until a wooden toothpick or knife inserted in center comes out clean. Cool in pan for 20 minutes then turn out onto a rack to cool completely.

Ingredients

2 1/4 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
3/4 cup margarine or butter, softened
1 cup sugar
2 eggs
2 Tbs milk
1 tsp vanilla
1 cup chopped nuts
1 cup finely cut pitted dates
1/3 cup finely chopped maraschino cherries
2 2/3 cups Kellogg's Corn Flakes®
15 maraschino cherries, cut into quarters

Directions

1. Stir together flour, baking powder and salt. Set aside.
2. In large mixing bowl, beat margarine and sugar until light and fluffy. Add eggs. Beat well. Stir in milk and vanilla. Add flour mixture, stirring until thoroughly combined. Stir in nuts, dates and the 1/3 cup chopped cherries.
3. Portion dough using level tablespoon. Shape into balls. Roll in KELLOGG'S CORN FLAKES cereal. Place about 2 inches apart on baking sheets coated with cooking spray. Top each cookies with cherry quarter.
4. Bake at 375° friend about 10 minutes or until lightly browned. Remove immediately from baking sheets and cool on wire racks. Store in airtight container.
Yield: 5 dozen (60) cookies

North Carolina's Favorite Sweet Potato Pie

Ingredients:

2 1/4 cups Cooked Mashed Sweet Potatoes
3/4 cup Granulated Sugar
1/2 cup Firmly Packed Brown Sugar
1/2 cup Packaged French Vanilla Instant Pudding
3/4 cup Evaporated Milk
2 large Eggs, room temperature
6 tablespoons Butter or Margarine, softened
1 teaspoon Ground Cinnamon
1 1/2 tablespoon Vanilla Extract
1 Unbaked Pie Shell (9 inch size)

Directions:
In a large bowl combine all ingredients and beat at medium speed until well blended. Spread evenly into unbaked pie shell.

Bake at 450 degrees friend. for 10 minutes. Reduce temperature to 350 degrees friend. and bake for 40 minutes longer or until set. Cool on wire rack.

If desired, garnish with whipped cream, raspberries and mint leaves.

Cherry Cream Cheese Tarts

Wonderful little cheesecake tarts from Paula Deen. Perfect for just about any occasion.

Yield: 12

2 (8-ounce) packages cream cheese, softened
2 eggs
1 cup sugar
12 vanilla wafers
1 teaspoon pure vanilla extract
1 (21-ounce) can cherry pie filling (or other pie filling)

Instructions
Preheat oven to 350 degrees friend.
Place a paper cupcake liner in each cup of muffin pan. Beat cream cheese with a handheld electric mixer until fluffy. Add sugar and vanilla, beating well. Add eggs, one at a time, beating well after each addition. Lay a vanilla wafer, flat side down, in each muffin cup. Spoon cream cheese mixture over wafers.
Bake for 20 minutes. Allow tarts to cool completely
