Carrot Cake With Baby Food Carrots


SERVES 12 , 1 cake
  1. Cake method: Preheat oven to 350ºF.
  2. Grease and flour a 9x13 baking pan.
  3. Place first 9 ingredients (through 2 teaspoons vanilla) in a large mixing bowl.
  4. Beat with electric beaters or mixer paddle for 2 minutes on medium speed.
  5. Pour the batter into the prepared pan.
  6. Bake in 350ºF oven for 30 minutes, until a toothpick inserted into the center of the cake comes out clean.
  7. Allow the cake to cool completely; prepare icing in the meantime.

  9. Icing Method: In a medium bowl, combine final three ingredients.
  10. Beat until smooth and fluffy.
  11. Ice completely cooled cake.
  12. Grab your own piece before anyone else knows it's done!

SERVES 20 -24
Caramel Glaze

Cream Cheese Frosting

  1. Have all ingredients at room temperature. Preheat oven to 325. Generously grease and flour a 9X13 pan or two 9 inch round pans.
  2. Sift flour with the baking powder, soda and salt. set aside.
  3. Cream butter and sugar until fluffy. Add beaten eggs, banana's and vanilla. Beat well.
  4. Add flour mixture to creamed mixture alternately with the buttermilk, starting and ending with flour mixture. Fold in nuts.
  5. Pour into prepared cake pan. Bake for about 35 to 40 minutes, or until toothpick inserted into the center of the cake comes out almost clean.
  6. While cake is baking, prepare the caramel glaze: In a large saucepan, combine sugar, butter, buttermilk, corn syrup and soda. Bring to a boil; then reduce heat to simmer for 5 minutes, stirring constantly. Glaze will be a caramel color. Remove from heat and stir in vanilla. NOTE: A large saucepan is needed because mixture will expand after coming to a boil. It will simmer down after about 3 minutes of cooking.
  7. Once cake is done, remove cake from oven and poke holes in hot cake with a fork or meat fork. Slowly pour caramel glaze over hot cake spreading evenly over entire cake. Cool cake until glaze is totally absorbed, about 15 minutes. Turn out of pan, if desired. Cool cake completely.
  8. Prepare cream cheese frosting: Cream butter and cream cheese until fluffy. Add vanilla and powdered sugar. NOTE: The amount of powdered sugar depends on how sweet you like the frosting. The cake is already sweet enough so I like a less sweet frosting that tastes more like cheesecake.
  9. Chill the cake until frosting is set. Serve chilled. Refrigerate any leftover cake.

Ingredients:
2 eggs
1 cup vegetable oil
1 cup white sugar
1 1/2 cups matzo meal
1/2 cup potato starch
1 teaspoon ground cinnamon
8 large apples - peeled, cored and sliced
1/2 cup brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Directions:
1.Preheat oven to 350 degrees friend (175 degrees C and grease a 9x13 inch glass baking dish.2.Combine eggs, oil and sugar in large bowl with electric mixer. Stir in matzo meal, potato starch and 1 teaspoon cinnamon.3.In a separate bowl, toss apples with brown sugar, 1 teaspoon cinnamon and nutmeg.4.Layer half of the dough into the prepared 9x13 inch dish. "Sweet and tasty Haroset is made with apples, cinnamon, honey and sweet wine. Serve chilled or at room temperature."
Ingredients:
6 apples - peeled, cored and chopped
1 cup finely chopped walnuts
1/2 teaspoon ground cinnamon
1 teaspoon white sugar
3 1/2 teaspoons honey
1/3 cup sweet red wine

Directions:

New York Crumb Cake
(from Martha Stewart)
2 tbsp vegetable oil
4 cups AP flour, divided
1.2 cup granulated (white) sugar
2 ½ tsp baking powder
½ tsp salt
1 large egg
½ cup milk (lowfat is fine)
2 tsp vanilla extract
1 cup light brown sugar
1 ½ tsp cinnamon
¼-½ tsp allspice (optional)
1 cup butter, melted

Preheat oven to 325F and grease and flour a 9x13 baking pan.
In a medium bowl, whisk together 1 1/2 cups flour, the granulated sugar, baking powder, and salt.
In a large bowl, whisk together the egg, milk, canola oil, and vanilla. Mix the dry ingredients into the wet ingredients and spread into pan (you might want to grease your spatula). Set aside.
In another large bowl, whisk together remaining 2 1/2 cups flour, brown sugar, and cinnamon (and allspice, if using). Pour melted butter over flour mixture, and stir with a rubber spatula until large crumbs form. Spread evenly over batter in pan.
Bake at 325F for 25-30 minutes, rotating once, until a tester comes out clean.
Cool completely on a wire rack before serving in large pieces.
Makes 12 servings.

Georgia Peanut Pie

Ingredients:

2 eggs, beaten
1/3 cup creamy peanut butter
1/3 cup white sugar
1/3 cup light corn syrup
1/3 cup dark corn syrup
1/3 cup butter, melted
1 teaspoon vanilla extract
1 cup salted peanuts
1 unbaked pie crust (9 inch size)

Directions:
Preheat oven to 375 degrees friend.

In a mixing bowl, blend together the eggs, peanut butter, sugar, light and dark corn syrup, butter and vanilla. Fold in peanuts and pour into pie crust.

Bake 30 to 35 minutes or until set. Remove from oven and cool; serve with ice cream or whipped cream if desired.

Spotted Dick Recipe
  • Serves 4
Ingredients

  • 3 oz (75g) Self Raising Flour
  • 3 oz (75g) Chopped Suet
  • 2 oz (50g) Fresh White Breadcrumbs
  • 3 oz (75g) Raisins
  • 3 oz (75g) Currants
  • 2 oz (50g) Sugar
  • Pinch of Salt
  • 1/2 teaspoon Mixed Spice
  • 1/4 pint (150ml) Milk
How to make it

  • Put all the dry ingredients into a bowl and mix them together well. Now add the Milk and mix to a fairly soft dough.
  • Put the mixture into a greased 2 pint (1.2 litre) pudding basin and cover with kitchen foil, making a pleat across the centre to allow the pudding to rise. Tie the foil firmly in place with string, forming a handle across the top so that you can lift the pudding easily.
  • Bring a large pan of water to the boil and place an inverted saucer in the bottom. Lower in the pudding basin and let it boil, covered, for 2 hours, filling the pan with more boling water as the level falls.
  • Remove from the pan by the string handle, unwrap, turn out on to a heated dish and serve with custard sauce.
  • Serves 4.

Sun Maid Rice Pudding

Yield: 4


1 1/2 cups Long grain rice - cooked
2/3 cup Sun Maid natural Raisins
2 cups Milk divided
1 tablespoon Butter or Marjarine
1/3 cup Granulated sugar
1/2 teaspoon Vanilla extract
1/4 teaspoon Salt Ground nutmeg or cinnamon
1 large Egg beaten

Instructions

COMBINE rice, 1-1/2 cups milk, sugar and salt in heavy saucepan.
COOK over medium heat, stirring occasionally for 15 to 20 minutes until thick and creamy.
BLEND remaining 1/2 cup milk and egg; stir into rice mixture.
STIR in raisins.
COOK an additional 2 minutes, stirring constantly.
STIR in butter and vanilla. Spoon into serving dishes.
Sprinkle with nutmeg or cinnamon, if desired.
Variation:
Apricot Almond Rice Pudding: During the last 2 minutes of cooking substitute 2/3 cup chopped Sun-Maid California Apricots for raisins and add 1/4 cup slivered toasted almonds.

How to Make Your Own Caramel Sauce

1 1/2 cups heavy (whipping) cream
1 cup packed brown sugar
2 Tbsp. butter

In a small saucepan, stir together the cream, brown sugar and butter over medium heat. Bring to a boil, then reduce heat and simmer for a few minutes, until smooth and slightly thickened.

Mexican Spice Cookies

Ingredients:

1/4 cup butter, softened
1/4 cup firmly packed brown sugar
1 egg
1/4 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves

Directions:
Cream butter; add sugar, beating until light and fluffy. Add egg and vanilla, beating well. Add flour, ginger, allspice, cinnamon, and cloves, stirring well.

Drop batter by teaspoonfuls 3 inches apart onto a lightly greased cookie sheet. Bake at 375 degrees friend for 5 to 7 minutes or until lightly browned.

Remove from cookie sheet; cool on wire racks. Serve on a platter.

Nutella - Caramel Hazelnut Brownies


SERVES 12
  1. Preheat your oven to 350 degrees.
  2. In a mixing bowl add your flour, baking powder, salt and cocoa powder. Using a whisk, mix together and set aside.
  3. In your stand mixer add the sugar and butter, mix together until creamy.
  4. Add in eggs one at a time & mix well. Add in your vanilla.
  5. Gradually add in your flour mixture until it’s well combined.
  6. Batter should be thick & sticky.
  7. Spray an ovenproof 8 x 8 dish with cooking spray.
  8. Place a piece of parchment paper (slightly larger than your dish to allow for handles) inside. It will adhere to bottom of dish.
  9. Take HALF of your brownie batter & smooth it on top of the parchment paper.
  10. Take your caramel sauce and spoon it on top of brownie mixture covering entire layer of brownie.
  11. Place the remaining brownie batter on top smoothing it out.
  12. Place in oven and bake for 30-40 mins until sides are firm and center is no longer jiggly.
  13. Allow brownies to cool completely before removing.
  14. Cut your brownies to your desired size.
  15. Make a small indentation with your finger into each brownie.
  16. Take your melted Nutella and drizzle over the tops of the brownies. Garnish with the hazelnuts.

Brandied Cranberry, White Chocolate Chip Cookies

Ingredients

  • 1 cup of brandy (to soak the cranberries in, then saving 1 1/4 teaspoons of it for later)
  • 1 cup of dried cranberries
  • 1 cup (two sticks) of butter, room temperature
  • 3/4 cup of granulated sugar
  • 3/4 cup of lightly packed brown sugar
  • 2 eggs, room temperature
  • 1/2 teaspoon of vanilla extract
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 2 1/4 cups of all-purpose flour
  • 1 cup of white chocolate chips
Method

1 Put the cranberries in a wide and shallow bowl, pour in a bit of brandy. Enough so they're surrounded by it, but not drowning. Cover and place in the fridge for an hour or more. Afterwards, place a colander over a bowl and pour the cranberries and brandy through, putting the cranberries and the brandy they soaked in aside.
2 Preheat oven to 375°friend. Beat the butter until light and fluffy. Add the sugars and beat again until light, fluffy and well incorporated.
3 Add the eggs, vanilla extract, and add 1 1/4 teaspoons of the brandy that the cranberries soaked in (as for the rest, I suggest popping it in a glass and topping it off a bit for yourself). Beat well until light and fluffy. Scrape down the sides of the bowl midway through to ensure even mixing.
4 Sift together the flour, baking soda, and salt, then add to the mixture a bit at a time, beating until just mixed. Fold in the brandy soaked cranberries and white chocolate chips. Let chill for 15 minutes in the fridge.
5 Line a baking sheet with parchment paper (a baker's best friend) and place rounded spoonfuls down on the sheet. Bake at 375°friend for 10-12 minutes or until golden brown. Let cool for a minute, then transfer to a wire rack to cool completely.
*I find that adding the baking soda separately seems to form softer cookies. This is how my mom and grandmother taught me, and if there is actual science behind it, I'm not aware but it seems pretty consistent, and it won't ruin the cookies if you try it this way.

Applesauce Nut Bread

Ingredients

  • 2 cups unbleached flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1/2 cup pecans, chopped fine
  • 1/2 tsp salt
  • 2 lg. eggs
  • 1/2 cup canola oil
  • 1 cup unsweetened applesauce
  • 1/4 cup apple cider

Method

Combine flour, sugar, baking powder, baking soda, cinnamon, ginger, cloves, nutmeg, nuts, and salt in a large mixing bowl.
Stir well to mix all the ingredients.
In a separate bowl place the egg, oil, applesauce, and apple cider.
Beat with an electric mixer until well blended.
Add to the dry ingredients.
Stir until completely moistened.
Preheat oven to 350F degrees.
Grease and flour a loaf pan.
Pour the batter into the loaf pan.
Bake 60 minutes or until a toothpick inserted in the center comes out clean.
Allow to cool completely before slicing.

Nutella Biscotti


2 ¼ cups all purpose flour
2 tbsp cocoa
½ tsp baking powder
½ tsp baking soda
½ tsp salt
3 large eggs
1 cup sugar
½ cup nutella
½ cup chocolate chips
½ cup hazelnuts (optional)​

Preheat oven to 350F.
Sift together flour, cocoa, baking powder, baking soda and salt in a medium bowl. Using an electric mixer, beat eggs in a large bowl until frothy. Add sugar and continue beating on high setting for 2 minutes. Beat in nutella. Add flour mixture to egg mixture and stir until well combined. Stir in chocolate chips and hazelnuts, if using.
Divide dough into 2 or 3 logs with well floured hands and arrange on a parchment lined baking sheet. Press logs into rectangles roughly ½ inch thick.
Bake at 350F for 20 minutes. Remove logs from oven.
Turn oven down to 300F.
Using a serrated knife, cut logs into 1/3-1/2 inch slices. Arrange on baking sheet and return to oven.
Bake for 10-12 minutes, turn biscotti over and bake an additional 10-12 minutes (depending upon the thickness of your slices). Remove to a wire rack to cool. Store in an airtight container.
Makes 3-4 dozen cookies.​

Watergate Salad


What You Need



1 can (20 oz.) DOLE Crushed Pineapple, in juice, undrained


1 pkg. (3.4 oz.) JELL-O Pistachio Flavor Instant Pudding


1 cup JET-PUFFED Miniature Marshmallows


1/2 cup chopped PLANTERS Pecans


1-1/2 cups thawed COOL WHIP Whipped Topping



Make It




MIX first 4 ingredients in large bowl until well blended.
STIR in COOL WHIP.
REFRIGERATE 1 hour.
