Moist And Creamy Coconut Cake

Ingredients:
1 white cake mix
1 1/2 cup milk
1/2 cup sugar
1 package angel flake coconut
1 container (8 oz size) whipped topping
Directions:
Bake cake as directed on box. Bake in 13 x 9 pan. Cool 15 minutes, then poke holes all over with big fork.
Meanwhile, combine milk, sugar, and 1/2 cup of coconut; bring to a boil. Reduce heat, simmer 1 minute. Carefully spoon over warm cake. Cool completely.
Fold 1/2 cup coconut into cool whip, spread over cake. Sprinkle remaining coconut over cake. Chill over night. If there is any left...it needs to be kept covered and refrigerated.

Abby's Famous Pecan Pie

1 9-inch unbaked pie crust
1 cup light corn syrup
1 cup firmly packed dark brown sugar<WBR><WBR><WBR><WBR>

3 eggs, slightly beaten
1/3 cup butter, melted
- 1/2 t. salt
1 t. vanilla
1 heaping cup pecan halves

Heat oven to 350 degrees. In a large bowl, combine
corn syrup,sugar, eggs, butter, salt and vanilla; mix well. Pour filling into
unbaked pie crust; sprinkle with pecan halves. Bake
for 45 to 50 mins or until center is set. (Toothpick inserted in center will
come out clean when pie is done.) If crust or pie appears to be getting
brown, cover with foil for the remaining baking time. Remove from oven and
cool.

* You can top it with a bit of whipped cream, but even plain, nothing tops
this!*

Entenmann's Pound Cake

1/2 lb real butter or margarine
2 cups powdered sugar
3 large eggs
1 2/3 cups flour
1 tablespoon lemon extract or vanilla

Preheat oven to 325.
  1. Spray an 8-1/2" Pyrex loaf dish with Pam.
  2. Cream butter with sugar on high speed of mixer for 5 minutes.
  3. Add 1 egg and then a little flour, beating 2 minutes.
  4. Add 2nd egg and half of remaining flour and beat 2 minutes.
  5. Add 3rd egg, rest of flour and extract, beating 2 minutes.
  6. Spread thick and creamy batter evenly in prepared loaf dish.
  7. Bake 65 minutes or until tester inserted into center comes out clean.
  8. Cool in baking dish on wire rack 30 minutes.
  9. Remove from dish. Slice 1/2" thick.

[/SIZE]Ingredients:
6 large tart apples (McIntosh, Macoun, Winesap)
1 cup sugar
2 tsp cinnamon
¼ tsp nutmeg

Peel and thinly slice apples. Sprinkle ¼ cup sugar in the bottom of prepared crust. Pile sliced apples into crust. Pour remaining sugar over apples. Sprinkle with cinnamon and nutmeg. (place several slices butter on top of fruit)
Place top crust over apples, fold edges under and crimp to seal.
Pierce top crust with knife to allow steam to escape.
Bake at 350 for one hour.
Serve with slice of white, sharp cheddar cheese.

Chocolate Cake Caramel Bars

50 caramels, unwrapped
1/3 cup evaporated milk
1 box German chocolate cake mix
3/4 cup butter, melted
1/3 cup evaporated milk
1 (12 ounce) package semi-sweet chocolate chips
  1. Melt first 2 ingredients together over low heat.
  2. In seperate bowl,combine last 4 ingredients.
  3. Put half of cake mixture in a greased & floured 9x13 pan. Bake 6 minutes at 350 degrees. Spread chocolate chips over cake mixture. Pour caramel mixture over chocolate chips. Pour remaining cake mix on top, dropping mix by spoonfuls.
  4. Bake at 350 degrees for 18 minutes, cool 20 minutes, cut into bars.

Appalachian Mountain Cobbler

Ingredients:
1 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup sugar
1 cup milk
1/2 teaspoon vanilla
1/2 cup butter or margarine
4 cups fresh or canned fruit or berries -- drained
1 cup fruit juice



Directions:
Mix until smooth the dry ingredients with the milk and vanilla. Melt butter in 8 x 10" baking pan. Pour batter over melted butter. Place over batter the fruit. Pour over the top the fruit juice.

Bake in preheated 350 degree oven for 30-35 minutes until light brown.

Texas Cake / Peanut Butter Fudge Cake

Ingredients
2 cups Sugar
1/4 cup Cocoa
2 cups All purpose flour
Fudge Frosting
1 teaspoon Baking soda
1/2 cup Butter or margarine
1/2 teaspoon Salt
1/3 cup Milk
1 8 oz. container Sour cream
1/4 cup Cocoa
2 large Eggs lightly beaten
1 1 lb. pkg. Powdered sugar
1 cup Butter or margarine
1 teaspoon Vanilla extract
1 cup Water

InstructionsCombine first 4 ingredients in a large bowl; stir in sour cream and beaten eggs. Melt butter or margarine in a heavy saucepan over medium heat. Whisk in 1 cup water and cocoa. Bring to a boil, whisking constantly. Remove from heat.

Stir cocoa mixture into flour mixture. Pour batter into a lightly greased 15 X 10 inch jellyroll pan.

Bake at 325 degrees for 20 to 25 minutes or until a wooden pick inserted in center of cake comes out clean. Spread Fudge Frosting evenly over warm cake.

FUDGE FROSTING:

Melt butter or margarine in a saucepan over medium heat. Whisk in milk and cocoa, and bring mixture to a boil. Remove from heat. Gradually add powdered sugar, stirring until smooth; stir in vanilla extract.

NOTE: To thin frosting, add 1 to 2 tablespoons milk.

PEANUT BUTTER-FUDGE CAKE: Omit sour cream in cake , and substitute 1-1/2 cups creamy peanut butter and 1/2 cup buttermilk. Continue as directed to prepare cake and Fudge Frosting. Garnish with miniature peanut butter cup candies, halved, if desired.

Double Delicious Cookie Bars

1/2 cup margarine or butter
1 1/2 cups graham cracker crumbs
1 (14 oz) eagle brand milk
1 (12 oz) hershey's semi sweet chocolate chips
1 cup reese's peanut butter chips( or cups)

Heat oven to 350 degrees (325 degrees for glass dish). In 13x9"
baking pan, melt margarine in oven. Sprinkle crumbs evenly over
margarine, pour milk evenly over crumbs. Top with chips, press down
firmly. Bake 25 to 30 min or until lightly browned. Cool. Garnish.
Cut into bars. Store loosely covered at room temperature.

Honey Bran Muffins with Fruit (dates, figs, prunes, apricots, etc)

Ingredients
2 1/2 cups Flour
1/2 cup Butter or margarine at room temperature
2 teaspoon Baking soda
1 cup Granulated sugar
1 teaspoon Salt
1/2 cup Honey
2 cups Allbran or oat bran
2 Eggs
3/4 cup Fruit of choice chopped
2 cups Buttermilk
1 cup Water boiling

InstructionsPre heat oven to 400 degrees. Spray bottoms of muffin pans or use muffin baking cups.
In a small bowl, combine flour, baking soda, and salt and set aside.
In another bowl mix fruit and bran and add boiling water set aside.
Using an electrick mixer; cream together sugar and butter; beat in eggs one at a time. Alternately add flour and buttermilk beating well after each addition. Beat in soaked bran and fruit mixture. put batter in muffin tins and bake for approximately 20 minutes delicious warm or cold

Ingredients
1 package Mini Pretzels 10 oz
1 lb M & M's
5 cups Cheerios
2 package Vanilla chips 12 oz each
5 cups Corn Chex
3 tablespoon Vegetable oil
2 cups Salted peanuts

Microwave on high for 10 seconds; stir until smooth. Pour over cereal mixture and mix well. Spread onto waxed paper. Cool; break apart. Store in an airtight container

Beer Bread

butter for greasing pan
3 cups self-rising flour
1/2 cup sugar
12 ounces beer
2 Tbls. melted butter

Heat oven to 375. Grease a loaf pan with butter and set aside.. In a large bowl, combine the flour, sugar and beer; mix well. The mixture should be sticky. Pour into prepared loaf pan and bake for 52 mins. Brush top of bread with melted butter and bake 3 mins. more.

Cherry Chocolate Chip Cake

This cake is very moist. If you like chocolate you can add more chocolate chips. I have also dusted the cake with powdered sugar when serving for guests. Enjoy!
2 cups all-purpose flour
1 teaspoon ground cinnamon
3/4 cup sugar
1/8 teaspoon salt
3/4 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1 teaspoon baking soda
21 ounces cherry pie filling
1 cup semi-sweet chocolate chips
  1. Preheat the oven to 350*friend (175*C). Grease and flour a 10-inch bundt or tube pan. Set aside.
  2. In a bowl, combine the flour, sugar, oil, eggs, vanilla, baking soda, cinnamon and salt. Mix well. Stir in the pie filling and chocolate chips.
  3. Pour the batter into the prepared pan. Bake for about 1 hour or until a wooden pick inserted in the center comes out clean.
  4. Cool on rack for 15 minutes and remove from the pan to cool completely.

Chocolate Mocha Iced Brownies

Ingredients:
1/2 cup butter, softened
1 tablespoon instant coffee
1/3 cup brown sugar
1 egg
1/4 teaspoon almond extract
4 tablespoons water
1 box (18 oz. size) devil's food cake mix
1 cup slivered almonds, toasted

***ICING***
1 stick butter, softened
4 cups powdered sugar, divided
1 1/2 teaspoon instant espresso powder
1/2 cup chocolate syrup



Directions:
Heat oven to 350F. Spray a 9x13" baking pan with nonstick cooking spray.

In a large mixing bowl, combine butter, coffee and brown sugar. Beat with an electric mixer on medium speed until light and fluffy. Add egg, almond extract, water and cake mix and beat until smooth. Stir in almonds. Turn batter into prepared pan and smooth to edges. Bake for 30-35 minutes until tester comes out clean. Cool completely before icing.

For icing, in a small mixing bowl, beat butter with powdered sugar, adding the sugar 1 cup at a time, until light and fluffy. Beat in espresso powder and chocolate syrup until smooth. Ice brownies and cut into squares.

Blackberry Wine Cake

1/2 cup nuts, chopped (I used walnuts)
18 ounces white cake mix
3 ounces blackberry Jell-O (can use raspberry or black cherry)
4 eggs
1/2 cup cooking oil
1 cup blackberry wine (I used Mogan David)

Glaze
1 cup powdered sugar
1/2 cup blackberry wine 1/2 cup butter
1-1 1/2 cup powdered sugar (to thicken the glaze)

Preheat the oven to 325 degrees.
  1. Grease and flour a Bundt pan; sprinkle the nuts in the bottom of the pan.
  2. In a large bowl, combine the cake mix and gelatin.
  3. Add the eggs, oil and wine.
  4. At low speed, beat just until moistened.
  5. Increase the speed to medium and beat for 2 more minutes; scrape the bowl frequently.
  6. Pour in the Bundt pan and bake for 45-50 minutes.
  7. Glaze: Bring the 1 c powdered sugar, wine and butter to a boil; the glaze will be fairly thin.
  8. While the cake is still warm and in the Bundt pan, pour half of the glaze on the cake.
  9. Let the cake sit for 30 minutes to absorb the glaze.
  10. Turn the cake out of the pan and completely cool.
  11. Thicken the remaining half of the glaze with additional powdered sugar and pour over the cake.

TWINKIE BURRITO (now I've heard everything)

4 (10"-12") flour tortillas (warmed)
1/2 to 3/4 cup chocolate sauce
4 Twinkies
2 cups sliced strawberries

Drizzle 1 side of each tortilla with chocolate sauce. Place Twinkies on top of chocolate sauce in center of each tortilla. Top each Twinkie with 1/4 cup sliced strawberries. Fold tortilla over Twinkies in "burrito style". Enjoy!

Black Cake

You will need a large loaf pan to bake it in as the cake will come out looking like a large loaf of bread. But don’t be fooled be the looks it tastes nothing like bread and everything like delicious. Enjoy!

3 cups flour
2 cups sugar
6 tablespoons cocoa
2 teaspoons baking soda
¾ cup vegetable oil
2 tablespoons vinegar
2 teaspoons vanilla extract
2 cups water

Mix all ingredients together, batter will be thin.
Pour into un-greased large loaf pan.
Bake 350 degrees for 35 minutes
Cool

Hawaiian Delight Cake

1 cup shortening
3 cups flour, sifted
1/2 teaspoon salt
2 cups sugar
3 1/2 teaspoons baking powder
1 cup Hawaiian Punch drink, red
1/2 teaspoon vanilla
1/2 teaspoon almond extract
4 eggs

FILLING
1/2 cup crushed pineapple, drained
1/2 cup coconut
1/4 cup margarine, whipped
1/4 cup maraschino cherries, chopped
2 1/2 cups powdered sugar (or more)
1/2 cup pecans, chopped

Cream shortening until light. Sift flour and measure. Sift flour with salt, sugar, and baking powder into shortening. Add punch and flavorings. Beat at medium speed for 2 minutes.
Add eggs, one at a time, beating thoroughly after each addition. Bake in two 9-inch greased and floured layer pans at 350 degrees for 25 minutes or until tests done.
Make filling of pineapple, coconut, margarine, and cherries. Add powdered sugar for spreading consistency. Add pecans.
Put cooled layers together with filling. Ice with a 7-minute icing. Sprinkle generously with coconut.

Mimi's Cafe Carrot Bread

Grease for pan
1 1/2 cups all purpose flour + more for dusting
1 tsp. baking soda
2 tsps. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 cup vegetable oil
1 cup brown sugar
3 eggs
1/2 cup chopped walnuts
1/2 cup diced canned pineapple, drained
1/2 cup raisins (golden or regular)
1 cup finely shredded carrots

Grease & flour a 9" square pan or 4 mini-loaf pans. Sift together the first 5 ingredients into a mixing bowl. In a separate bowl, whisk together oil, sugar and eggs. Stir liquid mixture into flour. Mix well. Add the next 4 ingredients; stir again.
Fill prepared pans 2/3 full with batter. Bake at 350 for about 30 mins.....mini loaves take about 20 mins.
