Are you doing a California coastal itinerary?
Cabo San Lucas and overnight Puerto Vallarta.
Last time we were in Cabo we walked around the harbor and looked at all of the fancy boats. Then we drank a pitcher of margaritas at a sidewalk cafe. Puerto Vallarta we can't remember. I suspect margaritas were consumed there too.
