Im making a grilled cheese on my wife's homemade foccacia bread as we speak because by the time this pork rests it's gonna be this week's feast

You guys ever notice as the cook the smoked food usually tastes better the next day? It's like smelling like smoke cancels out the flavor.

Probably a personal preference. Same night pulled pork after you let it rest properly is my favorite

I'm not a big sauce. Best bbq around here won the world championship 3 times. Their dry rub is unreal. I don't care for their sauce at all.
