I have found that if you get a really good fire goin for a good while , then put the SMOKIN stone in, shut both vents almost all the way closed, it stays at about 225 for over 10 hours with minimal adjusting. Maybe ive just been lucky.....

I use a Weber grate on the ears and a kiln shelf on that. Same thing.
