The packages were probably picked up past the time that they needed to be on their way to the airport, therefore pick up records them as being picked up the following day.

Yes it totally does, and I'm sure they company I order from gets a trailer dropped off and picked up like you described, they are a fairly big company, one package car definitely wouldn't fit everything. Thanks for some insight on how UPS actually works, interesting to me as a customer what is actually done to get millions of packages transported and delivered across the country.
