Cowboy Cornbread

1 (15 ounce) can corn
1 (15 ounce) can ranch style beans
1 green bell pepper
2 (8 ounce) packages cornbread mix
1 lb ground beef
  1. Chop bell pepper and set aside.
  2. Fry ground beef in skillet until cooked add bell pepper.
  3. Cook for 5 minutes and drain excess grease.
  4. Prepare one package of cornbread mix according to directions.
  5. Grease a 11x13 pan and pour in cornbread mix.
  6. Open corn and beans and pour into meat.
  7. Prepare 2nd package of mix and top meat and veggies mixture.
  8. Cook in oven 20 minutes.

Smoked Paprika Roasted Chicken

2 Tbsp smoked paprika
2 Tbsp honey
1 Tbsp lemon juice
1 Tbsp softened butter
2 teaspoons garlic salt (or 1 teaspoon salt plus 1 teaspoon garlic powder)
1/2 teaspoon pepper
1 whole 4-5 pound roasting chicken

1 Preheat oven to 325°friend. Rinse the chicken off with cold water. Pat dry thoroughly with paper towels (otherwise the paste won't stick).

2 Mix together the paprika, honey, lemon juice, butter, garlic salt, and pepper. Spread over the entire surface of the chicken and place on a shallow baking pan.

3 Bake at 325°friend for approximately 1 hour and 15 minutes. You may need to adjust the time depending on how big your chicken is. The chicken is done when the juices run clear (not pink) when a knife tip is inserted into both the chicken breast and thigh, about 165-170°friend for the breast and 180-185°friend for the thigh.

Plum sticky sauce: great on ribs
1/4 cup molasses
1/2 cup honey
1 cup brown sugar
1 tbs onion powder
1 tbs garlic powder
1 tsp cayenne pepper
18 oz plum jelly
1/2 cup Captain Morgans Spiced Rum
ad all ingredients in sauce pan heat on low until all sugars are dissolved
increase heat to bring to gradual soft ball boil, don't let past this stage but keep warm brush onto ribs that are more than half way cooked or grilled,sauce will leave good sticky coating on meat,ENJOY!!

Hobo Potatoes on the Grill

Nonstick cooking spray
3 slices bacon, coarsely chopped
4 cups, 1/4 inch thick, sliced potatoes
1/2 cup finely chopped green pepper
1/2 cup finely chopped onion
1 cup shredded cheddar cheese
1/4 tsp. seasoned salt
1/4 tsp. pepper

Fold a 36x18 inch piece of heavy foil in half to make an 18 inch square. Lightly coat one side of foil with cooking spray. On coated surface, arrange half of bacon in center of foil. Top with half the potatoes, half the pepper, half the onion and half the cheese. Top with remaining potatoes, peppers and onion. Sprinkle with the salt & pepper. Top with the rest of the cheese.

Lightly coat one side of another 18 inch square with cooking spray; place it coated side down on top of the potato stack. Seal all edges with a double fold, leaving space for steam to build. Grill on the grill over med. coals 20-25 mins. turning packet once until potatoes are tender.

Cream Cheese Jalapenos

12 large jalapenos
12 ounces cream cheese
12 slices bacon (any flavor) bbq skewers
  1. clean and hull jalapenos, cutting off the tops and hulling the inside. you can use a potato peeler to do this easily. (make sure all seeds are removed) rinse well. you can soak them in water or milk for a few hours or overnight depending on your tolerance for jalapenos. fill peppers to the top with cream cheese. wrap raw bacon around peppers and skewer them (about 5 to a skewer) you can either prepare them immediately or refrigerate them until ready for cooking. To cook you can grill them(this is best) or bake them. when bacon is done they are ready.
  2. Make sure you wash your hands thouroughly and never let children help prepare them.

Chicken In Cilantro Sauce

Ingredients:
1 Chicken (3 lb size), cut up
1 teaspoon Dried oregano, crushed
1 tablespoon Garlic salt
1 teaspoon Black pepper
2 tablespoons Red wine vinegar
1 bunch Cilantro, leaves only
1 medium Onion, quartered
2 medium Tomatoes, quartered
1 Green bell pepper, seeded and chopped
1 Yellow chile, seeded
2 tablespoons Oil
1 medium Onion, chopped
Paprika
Water


Directions:
Marinate chicken in mixture of oregano, garlic salt, pepper and vinegar.

Meanwhile, combine cilantro, onion, tomatoes, green pepper and chile in blender and blend until smooth. Set aside.

Heat oil in skillet; add onion and season to taste with paprika. Cook until onion is tender and golden. Add cilantro sauce and cook 2 minutes. Add chicken pieces and enough water to cover and cook until chicken is tender, about 45 to 55 minutes.

Southwest Style Meat Loaf

Ingredients
1 tablespoon olive oil
1 teaspoon salt
1 small green bell pepper finely chopped
1/4 teaspoon freshly ground black pepper
2 jalapeno peppers seeded and minced (for extra spice do not remove seeds)
1 egg
1 onion finely chopped
2 teaspoons Dijon mustard
2 cloves garlic finely chopped
1 cup soft fresh bread crumbs
1 teaspoon dried oregano leaves
1 1/2 pounds lean ground beef*
1 teaspoon ground cumin

Directions
*You can substitute a mixture of 3/4 pound ground beef and 3/4 pound ground pork, or your favorite combination of ground meats, e.g., beef, veal, pork, sausage.

Preheat oven to 350 degrees. Place a large skillet over medium heat, add oil, green pepper, jalapeno peppers, onion, garlic, oregano, cumin, salt and pepper. Cook 5 minutes or until soft, stirring often. Let cool.

In a bowl, beat egg and mustard. Stir in vegetable mixture, bread crumbs and beef. Gently mix until evenly combined.

Press mixture lightly into loaf pan. Bake for 1 hour or until meat thermometer registers 170 degrees. Let stand for 10 to 15 minutes. Drain pan juices; turn out onto a plate, and cut into thick slices.

Super Easy Tomato/Garlic Pasta

Ingredients:
3 tablespoons Olive oil plus more for boiling pasta
6 ounces Dry spaghetti
6 cloves Garlic more or less to taste; minced or pressed
Salt and pepper to taste
1 can (14.5 oz) Diced tomatoes with Italian seasoning
Asiago cheese or Parmesan cheese

Directions:
Boil salted water for pasta (add a little oil to the water).

Heat 3 tbs olive oil over medium heat, and add the garlic. Heat for about 1 minute, and then add the tomatoes. Heat over medium-low heat while the pasta cooks.

Once the pasta is done, drain, and toss with tomato mixture.

Garnish with Asiago or Parmesan cheese, and serve with a crusty bread and a salad.

Coconut Shrimp with Dipping Sauce

Ingredients
  • 1 14-ounce can light coconut milk, divided
  • 1 jalapeño pepper, seeded and chopped
  • 1/4 cup minced fresh cilantro
  • 1 1/4 pounds uncooked medium shrimp, peeled and deveined, tails left on
  • 3/4 cup all-purpose flour
  • 4 egg whites
  • 3/4 cup panko (Japanese) bread crumbs
  • 3/4 cup flaked coconut,
  • lightly toasted
  • 1/3 cup reduced sugar apricot preserves
  • 1 teaspoon spicy brown mustard
Directions
Preheat oven to 400 degrees.
Prepare a baking sheet with nonstick cooking spray.
In a small bowl, place 2 tablespoons of the coconut milk; cover and refrigerate. In a large resealable plastic bag, combine remaining coconut milk, jalapeño, cilantro and shrimp. Seal the bag and turn to coat. Refrigerate 1 hour.
Place flour in a shallow bowl. In another bowl, lightly beat the egg whites. In a third bowl, combine bread crumbs and coconut. Drain shrimp and discard marinade.
Dip shrimp in flour and egg whites, then roll in crumb mixture.
Place shrimp on prepared baking sheet. Bake 7-9 minutes on each side, or until lightly browned. Meanwhile, for dipping sauce, combine preserves and mustard with the reserved coconut milk. Serve with shrimp.

Disney's 50's Primetime Cafe Chicken Pot Pie

2 cups chicken tenderloins, uncooked
1 cup broccoli, tops only
1/2 cup carrots, cubed
1/2 cup celery, cubed
1/4 cup leeks, diced
3 tablespoons butter
3 tablespoons flour
3 cups milk or half-and-half
1 cup parmesan cheese, grated
2 chicken bouillon cubes
1 pastry for double-crust pie
1 egg, beaten
  1. Preheat oven to 400 degrees.
  2. In boiling salted water, simmer chicken tenderloins, broccoli, carrots, celery, and leeks until chicken is fully cooked and vegetables are tender, but still firm (about 15 minutes). Drain well and set aside.
  3. In a medium sized skillet, melt butter and add flour. Cook for 5 minutes and add milk or half-and-half. Bring to a boil and simmer until thickened (about 10 minutes). Dissolve chicken bouillon cubes in 1/4 cup warm water and add to sauce. Blend in grated Parmesan che3ese and remove from heat. Add cooked chicken and vegetables and mix well. Pour mixture into a deep-dish pie plate and cover with pie dough. Seal edges well and brush top with beaten egg. Bake until crust is golden brown and the filling is hot (about 45 to 50 minutes).

The Original Heloise's Spaghetti Sauce

1/4 cup olive oil
1/2 cup butter
1 cup finely chopped onions
1 lb. ground beef
4 strips finely chopped bacon
4 cloves garlic, minced
3 Tbls. finely chopped fresh parsley
1 bay leaf chopped fine
1 Tbls salt (I'd use less)
ground pepper to taste
1 tsp. crushed dry red pepper flakes
2 ounces red wine
2 (15 oz.) cans whole tomatoes or tomato sauce
1 small can tomato paste
1 cup water
1 finely chopped carrot

Heat oil in a large pot. Add butter and melt. Add onions and saute 'til lightly browned. Add ground beef and bacon; saute 'til browned stirring occasionally.
Add garlic, parsley, bay leaf, salt, pepper and red pepper.Cook over low heat for 10 mins. Add wine, cover and stem for a few more minutes. Add the tomatoes and tomato paste and water. Bring to a boil and add the chopped carrot. Cover and cook over low heat for an hour, stirring occasionally.
Serve over your favorite pasta.

Macaroni Casserole

Ingredients:
8 oz box Elbow Macaroni Noodles
1 pound Cheddar cheese grated
1 can Cream of mushroom soup
1 cup Medium mushrooms
1 cup Mayonnaise
Ritz crackers enough to cover top
1 large jar Pimentos Pepper
1 small Onion chopped
1 pound Ground beef cooked

Directions
Cook macaroni as directed on box. Mix macaroni and other ingredients. Put in baking dish. Cover top with Ritz crackers. Dot with butter. Bake at 325 for 35-40 minutes.

Pork Loin in a Bag

Ingredients:
4 pounds pork loin
1 tablespoon flour
1 medium yellow onion, sliced
1/2 medium red onion, sliced
3/4 teaspoon sage
1/4 teaspoon thyme
1 cup apple NECTAR
1 oven cooking bag with tie

Directions:
Rub sage and thyme on pork loin, add rest to bag. Put flour into bottom of oven bag. Layer onions on bottom, lay pork loin on top. Cover with apple nectar, let marinate for as little as an hour to overnight.

Cut 6 slits in bag. Cook in a 350 degree friend oven on middle rack for 1 and 1/2 hours. Let rest for about 10 minutes after coming out of the oven.

Slice and serve with juices from bag.

Garlic Linguini with Roasted Red Peppers

1 teaspoon salt
3/4 lb linguine
2 tablespoons olive oil
1/2 cup bottled roasted red peppers, drained and chopped
6 garlic cloves, minced
1/4 cup freshly grated parmesan cheese
1/4 teaspoon fresh ground pepper
1/2 teaspoon crushed red pepper flakes
  1. Cook pasta in boiling salted water 8-10 minutes or until pasta is al dente.
  2. While pasta is cooking, heat oil and garlic in a small saucepan over medium heat, stirring 2 minutes until heated throughout.
  3. Remove from heat and add roasted peppers.
  4. Drain pasta and transfer to serving bowl.
  5. Add peppers and garlic mixture.
  6. Season with red pepper flakes.
  7. Sprinkle with Parmesan and season to taste.

Veggie Fettucini

Ingredients:
2 cups broccoli florets cut small
1 cup green bell peppers julienned
1 cup red pepper julienned
1 cup yellow squash cut in 1/4 inch slices and halved
1 cup zucchini sliced 1/4 inch slices and halved
1 cup carrots julienned
1 pound fresh fettuccine pasta
3 cups Fontina cheese sauce
3 tablespoons butter
3 tablespoons olive oil
Fresh parmesan cheese

Directions:
Add the olive oil and butter to a large skillet. Saute the vegetables until tender crisp. While the vegetables are sauteeing, cook the pasta in rapidly boiling water.

Add the warm cheese sauce to the vegetables. Drain the pasta and add to the vegetables. Toss and coat the pasta with the sauce. Serve immediately with the fresh parmesan cheese.

Note: This pasta is also good with chopped ham, grilled chicken or shrimp added to it.

Honey Spareribs

Ingredients:

1 cup chili sauce
1/2 cup honey, or more
1/4 cup minced onion
2 tablespoons dry red wine, optional
1 tablespoon Worcestershire sauce
1 teaspoon Dijon-style mustard
3 pounds pork spareribs
Salt and pepper -- to taste



Directions:
Combine the first six ingredients in a small saucepan and bring to a boil over medium heat, stirring constantly. Reduce heat and simmer, uncovered, 5 minutes.

Sprinkle spareribs with salt and pepper. Place on a rack over a roasting pan; cover with foil and bake at 375F 35 to 45 minutes.

Uncover and brush generously with sauce. Bake 45 minutes, brushing with sauce every 15 minutes, until spareribs are fully cooked and tender. Cut spareribs into serving portions and serve with remaining sauce.

CHEESY POTATO SOUP

2 tablespoons butter or margarine
1/3 cup chopped celery
1/3 cup chopped onions
4 cups diced peeled potatoes
3 cups chicken broth
2 cups milk
1 1/2 teaspoons salt
1 dash paprika (optional)
2 cups shredded cheddar cheese
  1. In a large saucepan, melt butter over medium high heat. Saute celery and onions together.
  2. Add potatos and chicken broth.
  3. Cover and simmer until potatos are tender, about 12 minutes.
  4. In batches, puree potatos in blender and return to sauce pan. (I usually don't use a blender, I just use a fork).
  5. Stir in milk and seasonings.
  6. Add the cheese and heat only until melted. garnish with paprika, croutons, and parsley.

Hamburger Hot Dish

Ingredients:
1 1/2 pound lean ground beef
3/4 cup finely chopped onion
1 cup sour cream
1 can cream of mushroom soup
1 can cream of chicken soup
4 cups noodles cooked and drained



Directions:
Brown ground beef and onion in large skillet; drain off fat. Stir in remaining ingredients. Pour into greased 3 quart casserole or 9 x 13 inch shallow baking dish. Bake at 350?friend for 45 minutes or until heated through.

Tip: You can do all kinds of things with this casserole. Add any combination of chopped green pepper, pimiento, olives, corn, etc. Use regular or spiral shaped noodles. If desired, sprinkle top with buttered soft bread crumbs or grated cheese.
