Speedy Pasta Bowl

1 (20 0z.) pkg. refrigerated 4-cheese ravioli
1 (16 oz. ) jar sun-dried tomato Alfredo sauce
2 Tbls. white wine
2 med-size fresh tomatoes, chopped**
1/2 cup chopped fresh basil
1/3 cup grated parmesan cheese

Prepare pasta according to pkg. directions. Meanwhile, pour Alfredo sauce into a med. saucepan. Pour wine into sauce jar, cover and shake well.....add to saucepan. Stir in chopped tomatoes and basil and cook over med. heat about 5 mins. Toss with pasta and top with parmesan cheese.

** 1 (14.5 oz.) can petite diced tomatoes, fully drained, may be substituted

KFC Coleslaw

1/2 cup sugar
1/2 tsp. salt
dash pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 1/2 Tbls. white vinegar
2 1/2 Tbls lemon juice
8 cups finely shredded cabbage
1/4 cup finely shredded carrots

Combine the sugar, salt, pepper, milk, mayo, buttermilk, vinegar & lemon juice and beat 'til smooth. Pour over cabbage and carrots and mix well to coat. Cover and refrigerate at least an hour.

White Cheddar Mac'n'Cheese

1/4 cup butter
2 tablespoons white flour
2 cups 2% low-fat milk 10 ounces bar cracker barrel vermont sharp white cheddar cheese
1/2 cup grated parmesan cheese
1 lb elbow macaroni noodles
3/4 cup breadcrumbs
  1. Preheat oven to 350 degrees.
  2. Cook macaroni pasta per package instructions. Drain and set aside.
  3. In a medium saucepan on medium heat, add butter and cook until melted.
  4. Remove saucepan from heat and add flour. Wisk constantly for 1 minute.
  5. Return saucepan to medium heat and add milk and stir to combine.
  6. Heat mixture until Milk is hot but not boiling.
  7. Chop white cheddar cheese into smaller squares (you can also grate cheese) and add to milk mixture.
  8. Cook for 10 minutes or until cheese is completely melted.
  9. Add Parmesan cheese and stir to combine. Cook until all cheese is melted, about 2 more minutes.
  10. Add macaroni noodles to saucepan and stir to combine pasta with cheese sauce.
  11. Pour into a casserole dish or a ceramic, oven-safe crock.
  12. Sprinkle breadcrumbs on top of macaroni.
  13. Cook uncovered for 30 minutes. Let sit for 3-5 minutes after cooking to cool.

Pasta With Tomato Brie Sauce

Ingredients:
4 cloves garlic, minced
3 medium tomatoes, diced
1 teaspoon dried oregano or basil
1 piece Brie cheese (the size of a piece of pie)
Salt and pepper to taste
1 pound cooked pasta (meat-filled ravioli is nice)



Directions:
Put pasta on to cook.

Meanwhile, in a large skillet, cook garlic in some olive oil for 30 seconds. Add tomatoes and oregano and cook until tomatoes break down and form a sauce (about 5-8 minutes).

Remove white rind from Brie cheese and add to sauce in chunks. Stir until melted, season as desired. Toss with cooked pasta.

Good Chili

1 pound Ground beef
1 large Onion, diced
1 Green pepper, diced
2 tablespoons Chili powder
1 teaspoon Cumin
1 teaspoon Salt
1 teaspoon Black pepper
16 ounces canned Whole tomatoes(chopped)
8 ounces Tomato sauce
a couple shakes of your favorite hot sauce.
16 ounces Kidney beans


Directions:
Brown ground beef with onion and green pepper. Add remaining ingredients except the beans and cook covered over low heat for an hour and a half, stirring often. Add the beans about 30 mins. before serving.

Hot Sausage & Noodle Bake

1/2-1
lb egg noodles
1 large onion, chopped
1 lb hot Italian sausage
1 (10 ounce) box frozen chopped spinach (thawed and with water squeezed out) 1 (10 ounce) can cream of mushroom soup
1 garlic clove, minced
1/2 teaspoon dried tarragon
1/2 teaspoon dried marjoram
1 egg
1 lb low-fat ricotta cheese
  1. Preheat oven to 375 degrees.
  2. Cook noodles for 5-7 minutes. Drain noodles.
  3. Cut sausages into bite-size pieces. Sautee onion and sausage in skillet until brown (about 5-7 minutes). Remove sausage and onion and get rid of drippings.
  4. Stir together noodles, onion, sausage, spinach, mushroom soup, garlic, tarragon, and marjoram.
  5. Transfer to buttered casserole dish and spread evenly.
  6. Combine egg and ricotta in bowl and mix with noodle mixture.
  7. Bake for 25-30 minutes.

Zesty Tomato Pasta
Ingredients:
1 cup chopped onions
2 slices bacon, chopped
1 teaspoon minced garlic
1/8 teaspoon crushed red pepper, or to taste
1 teaspoon fresh basil, chopped
1 can (28 ounce size) crushed tomatoes
1/4 cup fresh flat-leaf parsley, chopped
1 lb. fresh fresh fettuccine
freshly grated parmesan cheese



Directions:
Cook pasta according to package directions.

Meanwhile, cook onions with bacon in large skillet over medium-high heat until tender, 5 to 8 minutes. Stir in garlic, red pepper and basil; cook 30 seconds. Stir in tomatoes and bring to boil. Simmer 10 minutes. Stir in parsley.

Toss with cooked pasta. Serve topped with Parmesan cheese.

My first post here, never tried it. ...Looks yummy
DEEP-FRIED RATTLESNAKE

1 medium-sized rattlesnake (3-4 lbs.), cut into steaks
1/2 cup flour
1/4 cup cornmeal
1/4 cup cracker crumbs
1/2 cup milk
1 egg
1/4 teaspoon garlic powder (not garlic salt)
1 teaspoon salt
Dash pepper

Mix dry ingredients. Whisk milk into beaten egg and use to dip snake
steaks.
Then coat them with dry ingredients. Fry, uncovered, in 400 degree oil
until brown.

Yum,Yum! It sorta tastes like chicken.

Creamy Chicken Noodle Bake

1/2 (16 ounce) package egg noodles, uncooked
4 cups hot water
4 chicken bouillon cubes
6 tablespoons butter or margarine
6 tablespoons flour
1 teaspoon salt
1 teaspoon paprika
1 pinch pepper
4 cups diced cooked chicken
3 tablespoons parsley flakes
  1. Preheat oven to 350 degrees.
  2. Prepare noodles according to package directions; drain.
  3. Dissolve bouillon cubes in hot water and reserve.
  4. In saucepan, melt butter or margaring, stir in flour and seasonings.
  5. Slowly add reserved water.
  6. Cook and stir over low heat until thickened.
  7. Add remaining ingredients and noodles, tossing gently to mix.
  8. Pour into a greased 13X9X2 pan.
  9. Bake for 35-45 minutes or until hot and bubbly.
  10. Refrigerate any leftovers.

Oven Sausage Pancake Square

1 packages (12oz.) bulk pork sausage( I like the Italian sweet sausage)
1 cup shredded cheese
1 egg
1/4 cup milk
2 tablespoons maple-flavored syrup
1 tablespoon vegetable oil
1/2 cup flour
1 teaspoon baking powder
1/8 teaspoon salt
3/4 cup maple-flavored syrup

1. Heat oven to 350. In a skillet cook sausage over medium-high heat 5 to 7 minutes,
Stirring frequently until no longer pink. Drain on paper towels. In an ungreased 8 0r 9 inch
Square pan, spread cooked sausage.Sprinkle cheese over sausage.

2. In large bowl, beat egg, milk. 2 tablespoon maple syrup and the oil with wire whisk
Until blended. Beat in flour, baking powder and salt. Poor batter evenly over sausage and cheese.

3. Bake uncovered 25 to 30 min. or until golden brown. Serve topped with maple syrup.

Outback's Potato Soup

5-6 large russet potatoes
1 (12oz.) can evaporated milk
1 lb. Velveeta Cheese, cubed
salt
pepper
Garlic salt
Garnishes: sour cream, bacon bits, shredded cheddar green onion , sliced..

Peel and cut potato into snall pieces. In med.-sized pot add potatoes and cover with water; boil 'til tender, but not falling apart. Drain.
Add milk & cheese to potatoes. Cook on low heat, stirring constantly 'til cheese melts. Do not boil. Season to taste with salt, pepper and garlic salt.
Ladle soup into serving bowls and garnish.

CHEESY MEATLOAF

Ingredients -
1 pound ground beef
1 pound ground pork
1 (1.25 ounce) envelope dry onion soup mix
2 eggs, beaten
1-1/2 cups dry bread crumbs
ground black pepper to taste
3/4 cup water
2 cups shredded mozzarella cheese, divided

Directions 1.Preheat oven to 350F2.In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water3.Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan4.Spread remaining 1 1/2 cups cheese over meat loaf mixture5.Top with remaining half of meat loaf mixture6.Bake in preheated oven for 60 minutes7.Let cool 10 to 15 minutes before serving

Tuna Salad Biscuit Cups

1 (16 ounce) package refrigerated buttermilk biscuits
1/2 cup mayonnaise
2 tablespoons dill relish
1 tablespoon soy sauce
1/4 teaspoon dill weed
1 (12 ounce) can tuna, drained
1 (8 ounce) can water chestnuts, drain & mince
  1. Flatten each biscuit into a 3 inch circle. Press each biscuit into a greased muffin cup. Bake at 400 degrees for 10-12 minutes or until golden brown. Cool 5 minutes.
  2. Combine the mayonaise, relish, soy sauce, dill weed, tuna and water chestnuts.
  3. Spoon into biscuit cups and serve immediantly.

Chicken & Dumpling Pie

Ingredients:
3 cups chopped cooked chicken
2 cans (10 3/4 oz size) cream of chicken soup, undiluted
1 can (10 1/2 oz size) condensed chicken broth, undiluted
1 can (15 oz size) mixed vegetables, drained
1/2 teaspoon poultry seasoning
2 cups biscuit mix
1 carton (8 oz size) sour cream
1 cup milk



Directions:
Combine first 5 ingredients in a large bowl, and pour chicken mixture into a lightly greased 13x9x2-inch baking dish.

Combine biscuit mix, sour cream, and milk in a medium bowl; pour over chicken mixture.

Bake at 350 degrees friend for 50 to 60 minutes or until topping is golden.

Note: try using oriental veggies instead of regular mixed veggies for a nice change.

I don't share this with everyone. It's my own personal meatball recipe with sauce. I figured after 7 years I can trust you all with this.....

My Meatballs and sauce

1 lb. ground beef
1 egg, lightly beaten
2 cloves garlic, minced (divided use)
handful of breadcrumbs
1/3 cup grated parmesan/romano cheese
2 Tbls. basil....fresh chopped -or- 1 tsp. dried
1/2 tsp. oregano
a sprinkle of salt
a couple grinds of pepper

Mix all together reserving 1 clove of garlic. Shape into balls and brown in olive oil. Cook thoroughly and when the balls are browned, add the last minced garlic and saute with the balls for just a few mins. (do not brown)

Then I add 1 can petite diced tomatoes, 1 jar Ragu (Traditional) and 1 or 2 cans of Hunts Four Cheese Spaghetti sauce. Also sprinkle some basil & oregano (always more basil than oregano)....some grated parmesan and ground pepper. Cook low for several hours and stir often.

Other options.....Instead of meatballs, brown chicken or boneless pork or sausage and they make a little oilier sauce, but oh so good.

Crispy Oven Fried Drumsticks

3 cups cornflakes, crushed
1/3 cup grated parmesan cheese
1/2 tsp. salt
1/4 to 1/2 tsp. ground red pepper
1/4 tsp. black pepper
3/4 cup fat free buttermilk
8 chicken drumsticks, skinned
cooking spray

Combine first 5 ingredients in a large zip lock bag. Seal and shake well to combine. Pour buttermilk into a shallow bowl. Dip 2 drumsticks in buttermilk and place in bag. Seal & shake well, coating drumsticks completely. Place chicken on Pam sprayed aluminum foil lined baking sheet. Repeat with remaining drumsticks. Sprinkle left over cornflake mixture evenly over drumsticks on baking sheet. Lightly coat with Pam. Bake at 425 degrees for 25-30 mins until well browned and done.

Martha Stewart's Spaghetti & Clams

1 tablespoon salt
1 lb dried linguine
1/4 cup extra-virgin olive oil
2 garlic cloves, smashed and peeled
2 (6 ounce) cans minced clams with juice
1/4 teaspoon red pepper flakes
fresh ground pepper
1/4 cup Italian parsley, chopped
1 tablespoon cold unsalted butter
  1. In large covered pot, heat a gallon of water with a Tbls. of salt and bring to a boil. When it boils, add the pasta and cook al dente.
  2. Meanwhile, make the sauce. In a skillet, large enough to hold the pasta later on, heat the oil over medium-low heat.
  3. Add the garlic and slowly cook until golden brown. Do not burn! Add the clams with their juice, red pepper flakes and salt and pepper to taste. Stir, reduce the heat to a simmer and simmer until slightly thickened, about 5 minutes.
  4. Reserving 1/2 cup cooking water, drain the pasta in a colander. Add the drained pasta, parsley, butter and salt and pepper to the sauce and mix well, adding a few tablespoons of pasta cooking water if needed. Cook 1 minute and then serve.

Sweet Red Pepper And Crab Bisque

Ingredients:
2 tablespoons butter
1 cup finely chopped onion
1 cup chopped celery
1 cup chopped red bell pepper
1 1/4 teaspoon Old Bay or other seafood spice blend
3 cups fish stock or bottled clam juice
1/2 cup diced peeled russet potato
1/2 cup half and half or skim evaporated milk
1 pound crabmeat



Directions:
Melt butter in heavy medium saucepan over low heat. Add onion, celery, bell pepper, and seasoning. Cover; cook 10 minutes, stirring twice.

Add stock and potato; bring to a boil. Reduce heat, cover partially, and simmer until potato is very tender, about 30 minutes.

Working in batches, pur?soup in blender. Return soup to saucepan. Add half and half; bring to a simmer. Mix in crab. Season to taste. Cover; let stand 1 minute.

Ladle into bowls.

Pasta With Sausage, Tomatoes, And Cream

Ingredients:
1 tablespoon olive oil
1/2 pound sweet Italian sausage links, casings removed, crumbled
1/4 teaspoon crushed dried red pepper flakes
1/4 cup diced onions
1 1/2 clove garlic, minced
1 can (14.5 oz. size) Italian plum tomatoes, drained, coarsely chopped
3/4 cup whipping cream
1/4 teaspoon salt
6 ounces penne pasta
1 1/2 tablespoon minced parsley
grated parmesan cheese



Directions:
Heat oil in a heavy skillet over medium heat. Add sausage and crushed red pepper. Cook until sausage is no longer pink, stirring frequently, about 7 minutes. Add onion and garlic to skillet and cook until onion is tender and sausage is light brown, stirring occasionally, about 7 minutes. Add tomatoes, cream, and salt. Simmer until mixture thickens slightly, about 4 minutes. Set aside.

Cook pasta in large pot of boiling water. Drain. Bring sauce to a simmer. Add pasta to sauce and cook until pasta is mixed in and sauce thickens, stirring occasionally, about 2 minutes. Divide pasta between plates. Sprinkle with parsley.

Serve, passing Parmesan separately.
