I've fried several over the years, including 4 in one day. Get the oil level correct beforehand by using water with the turkey you're going to use immersed and make a mark. Turkey has to be DRY. Paper towels are your friend. Do it outside if possible. Get your oil up to temp using a thermometer. Lower it s-l-o-w-l-y into the oil. Cook it 3.5 minutes/lb. (approximately) Consume several adult beverages. After cooking, allow the oil to drain. Enjoy.
