Do they taste different coming out of nearly frozen water?

I like to catch carp. they are a fun fish to catch. not good for anything else.
It's not 'nearly frozen' under the ice, but it is colder.
The flesh is firmer and sweeter. Mix a pinch of Coleman's dry mustard in the breading, and it doesn't get any better.
