Excuse my stupidity, but not real clear what you mean
You cut the back bone out, then press on the breast side to flatten it out. Put some olive oil, salt and pepper on the skin, can smoke at 300 or grill at 450, and in short order, turns out delicious. Did a 13lb turkey in about 80-90 minutes, yesterday, and the skin was to die for.
