I smoked for 3 hours at 225. Then pulled em out put in foil with a little bit of wine, wrapped smoked for 2 hours at 225. Pulled out, brushed on the BBQ, back in for an hour.


Turned out good

I do them the same way I take them off when they still have a little “bite” left to them. Don’t like them falling apart

I usually use cherry or pecan. I find it to be mellower and much easier to work with.


I went Apple. I like the taste of apple and pork.


I use either apple juice or that Stella Artois cider to brush on my pork steaks and sear em with that. You kinda of get a small taste of the apple behind the BBQ sauce. It’s great. I was pleased with the apple chips tonight. I might add a few mesquite chips in next time
