Mexican Corn Chowder (microwave)

1/2 cup chopped onion
1/3 cup chopped green pepper
2 Tbls. Butter
1 clove garlic, minced
1/4 tsp. Ground cumin
1/8 tsp. Chile powder
1 can (10 3/4 oz.) chicken broth
1 cup water
1 pkg (10 oz.) frozen corn
1 med. Tomato, seeded & chopped
2 Tbls. Canned chopped green chilies
1 tsp. Dried parsley flakes
1/2 tsp. Salt

In a 2 qt. Casserole, combine onion, green pepper, butter, garlic, cumin and chile powder. Cover. Microwave on
High for 5-7 mins. Or 'til vegetables are tender, stirring once or twice. Add remaining ingredients, re-cover. Microwave
At high for 8-12 mins or until soup is hot, stirring once or twice.

The smoked salmon hash omelette is off the chain good!!!!
Migas and eggs rocks too!
They also have a big table for dressing your pancakes, whipped butter, three or four diff kinds of fruit, whip cream, peanut butter.

Red Cabbage With Pork and New Potatoes


SERVES 4
  • 1-2 tablespoon olive oil
  • 4 boneless pork loin chops, 1/2 inch thick
  • 1 medium yellow onion, finely chopped
  • 4 cups thinly sliced red cabbage
  • 1 1/2 lbs tiny new potatoes, scrubbed
  • 2 medium tart green apples, cored and thinly sliced
  • 2 tablespoons dark brown sugar
  • salt and pepper, to taste
  • 1 tablespoon red wine vinegar
  • 1 cup white wine
  1. Warm olive oil in heavy dutch oven over medium high heat; add the pork loin chops and brown on all sides. Remove meat and set aside.
  2. In same skillet saute the onion until golden, about 5 to 10 minutes; adding in a touch of wine and scraping up the brown bits from the meat.
  3. Stir in cabbage, potatoes and sliced apples. Sprinkle with brown sugar, salt, pepper and red wine vinegar. Place browned chops on top of all and pour 1 cup of white wine over all.
  4. Cover and bake, stirring once or twice, in a preheated 375 degree oven for 90 minutes or until tender. To keep meat moist, submerge into cabbage mixture as it cooks.

I usually like watching some cooking shows, but there's one on today that really irritates me.
It's "Alex's Day Off" with Alex Guarnaschelli. She's making a Sunday Brunch and it's Father's Day. It's all good.

She starts with making her own butter!! Oh, c'mon !!! The butter in the store is fine enough. Then she uses the buttermilk left over from making the butter for making a coffee cake. She tries to talk sensual throughout her show and we all know that only works for Giada.

She also is a judge on 'Chopped' sometimes and she looks down her nose at people. I don't see how she got her own show. :knockedout:

Subway's Golden Broccoli Cheese Soup (Copycat)


SERVES 4
  • 2 teaspoons onions
  • 2 teaspoons melted butter
  • 3 tablespoons flour
  • 1/4 teaspoon pepper
  • 2 cups milk
  • 1 cup grated cheddar cheese (I use white cheddar)
  • 3 chicken bouillon cubes
  • 1 1/2 cups boiling water
  • 1 (10 ounce) package frozen broccoli
  1. Cook onion in butter until it's tender.
  2. Stir in flour and pepper; add milk.
  3. Cook over medium heat until thickened to make the roux.
  4. Slowly add cheese.
  5. In another pan, dissolve bouillon cubes in boiling water.
  6. Add broccoli. Cook until tender.
  7. Add to cheese mixture and stir well.
  8. Note: You may want to chop up broccoli into finer pieces depending on your preference.

Herb Dumplings With Pork Chops


SERVES 6 , 1 skillet
  • 2 tablespoons oil
  • 6 pork chops
  • 1 onion
  • 1 (10 3/4 ounce) can condensed cream of mushroom soup
  • 1 (4 ounce) can mixed mushrooms
  • 1/2 cup water
  • 1/2 teaspoon sage
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon sage
  • 3 tablespoons cold butter
  • 3/4 cup milk
  • 1 tablespoon minced fresh parsley (or 1/2 tbsp. dried)
  1. In a large skillet, heat oil.
  2. Brown pork chops on both sides.
  3. Slice onion, and place on top of pork chops.
  4. Mix together the soup, mushrooms, water, and sage. Pour over pork chops.
  5. Bring to a boil and reduce heat.
  6. Mix together flour, baking powder, salt, celrey seed, and sage. Cut in butter.
  7. Stir in milk just until dry ingredients are moistened.
  8. Drop by spoonfuls into soup mixture.
  9. Sprinkle with parsley.
  10. Simmer for 15 minutes.
  11. Cover and simmer until a toothpick inserted in a dumpling comes out clean, about an additional 15 minutes.

Mozzarella Chicken Roll Ups
What You Need!

2 oz. (1/4 of 8-oz. Pkg.) PHILADELPHIA Neufchatel Cheese, softened


1/4 cup finely chopped green peppers


1/2 tsp. Dried oregano leaves


1/4 tsp. Garlic salt


1 cup KRAFT 2% Milk Shredded Mozzarella Cheese, divided


4 small boneless skinless chicken breast halves (1 lb.), pounded to 1/4-inch thickness


1 cup spaghetti sauce



Make It!



HEAT oven to 400°friend.
MIX first 4 ingredients until well blended; stir in 1/2 cup mozzarella.
PLACE chicken, top-sides down, on work surface; top with cheese mixture. Starting at one short end, tightly roll up each breast, tucking in ends of chicken to completely enclose filling. Place, seam-side down, in 9-inch square baking dish sprayed with cooking spray. Top with spaghetti sauce; cover.
BAKE 30 min. Or until chicken is done (165°friend). Sprinkle with remaining mozzarella; bake, uncovered, 3 to 5 min. Or until melted.

Mom's Sloppy Joes


SERVES 4 -6
  • 1 lb lean ground beef
  • 3/4 cup ketchup
  • 2 tablespoons dark brown sugar, can sub light brown
  • 2 tablespoons lemon juice, fresh squeezed or the concentrate
  • 1 1/2 teaspoons worcestershire sauce
  • 1 teaspoon vinegar
  • 1/2-1 teaspoon mustard, regular yellow table mustard to taste
  • 4-6 hamburger buns
  1. In frying pan, brown ground beef til no longer pink, breaking up into very small pieces as you cook. (If you leave it in larger pieces/chunks, the meat won't all get coated as much, and won't be as good. Will also fall off the bun more easily.).
  2. Drain grease.
  3. Add rest of ingredients, stir well to mix.
  4. Simmer over low heat for 20 minutes or so, stirring ocaisionally.
  5. Serve on warmed hamburger buns.

Potluck Beef & Noodle Bake

Ingredients:


1 pound lean ground beef
1 medium onion, quartered, sliced
1 1/2 teaspoons salt
1/8 teaspoon ground black pepper
1 teaspoon Worcestershire sauce
2 cups fine noodles, about 4 ounces (uncooked)
1 can (about 15 ounces) cream-style corn
1 can (10 3/4 ounces) condensed cream of celery or cream of mushroom soup
1 soup can of water

Preparation:

In a skillet, brown ground beef, breaking up into chunks. Drain off grease; stir in onion, salt, pepper, and Worcestershire sauce. Continue to cook, stirring constantly, for about 3 minutes. Spoon mixture into a greased 2-quart baking dish. Top with the uncooked noodles. Combine corn, soup, and water in a saucepan over medium heat. Bring to a boil, stirring constantly. Pour sauce over noodles; stir gently so sauce will flow down to bottom and cover ingredients evenly. Cover dish and bake at 350° for 45 to 60 minutes, until noodles are tender.
Serves 4.

Crab Imperial presented by Abingdon Manor
An Extraordinary Inn & Restaurant

1 lb lump crabmeat, remove bits of shell and cartilage
2 slices firm textured white bread
2 Tbls.unsalted butter, melted
2 tablespoons curley parsley leaves rinsed and dried
1/2 teaspoons salt
1/8 teaspoon freshly ground black pepper
Pinch of cayenne pepper
2/3 cup mayonnaise
1/2 teaspoon dry mustard

Preheat the oven to 400. Lightly coat 6 large scallop shells (or a shallow casserole) with non stick cooking spray. Place the crab in medium size mixing bowl and set aside. Tear the bread into small chunks and put into food processor. Pulse to moderately coarse crumbs. Pour in melted butter and pulse to incorporate. Tip crumbs onto wax paper
And put aside.
Put the parsley, salt and black and cayenne pepper into the food processor and pulse a few times until coarsely chopped. Add mayonnaise and mustard and process until smooth about 5 seconds. Blend with crab meat and toss lightly to mix.
Mound the mixture into the shells or spread thinly in the casserole and spread the bread crumbs on the top. Bake uncovered on the middle rack of the oven until bubbling and slightly brown, 12 to 15 minutes. .

Paula Deen's Uncle Bubba's Wings

Paula's younger brother, Earl "Bubba" Hiers, is the wing man in the family. He serves about 200 pounds of them every week at Uncle Bubba's Oyster House in Savannah. Paula put her own spin on Bubba's recipe, adding two sauces a Thai inspired dip and a spicy butter. I found ths recipe in the January/February 2010 Food Network Magazine. Please note: Cooking/prep time does not include 24 hour marinating time.

For the wings

  • 1 1/2 cups hot sauce
  • 1 1/2 tablespoons Cajun seasoning
  • 1/2 tablespoon cayenne pepper
  • 3/4 tablespoon garlic powder
  • 3 lbs chicken wings
  • Peanut oil, for frying
For the sauces

  • 1/2 cup salted butter, softened
  • 1/2 cup hot sauce
  • 1 cup sweet Asian chili sauce
  • 1 tablespoon soy sauce
  1. Prepare the wings: Combine the hot sauce, Cajun seasoning, cayenne and garlic powder in a large bowl and mix well. Add the wings and toss. Cover and refrigerate 24 hours.
  2. Heat about 2 inches of oil in a deep fryer or deep-sided pot until a deep-fry thermometer registers 350°. Remove the wings from the marinade and drain off excess moisture. Carefully add the wings to the hot oil in batches the oil may splatter) and cook until crisp, about 10 minutes.
  3. Make the sauces: Whisk the butter and hot sauce in a bowl. Mix the chili sauce and soy sauce in another bowl. Serve with the wings.

"A recipe for Amish meatloaf topped with bacon strips and a ketchup glaze that I had while in Amish country in Holmes County, Ohio."
Ingredients:
2 pounds ground beef
2 1/2 cups crushed butter-flavored
crackers
1 small onion, chopped
2 eggs
3/4 cup ketchup
1/4 cup brown sugar
2 slices bacon

1 cup ketchup
2 tablespoons vinegar
3/4 teaspoon salt, or to taste
2 tablespoons prepared yellow mustard
1/2 cup brown sugar
Directions:
1.Preheat the oven to 350 degrees friend (175 degrees C).2.In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar until well blended. Press into a 9x5 inch loaf pan. Lay the two slices of bacon over the top.3.Bake for 1 hour in the preheated oven, or until cooked through. While the loaf bakes, mix together the remaining 1 cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.

My own version of tuna noodle casserole. Extremely easy and pretty good.
(c) 1993

You need:
1 large baking pan

egg noodles (I use 1/2 large bag or roughly 6-7oz)
1 can cream of celery
1/4 cup mayonaise
2 cans of premium canned tuna in olive oil
1/4 cup milk
1/2 chopped sweet onion
1 can green beens ( or roughly 2 cups fresh cut)
2 cups chopped carrots
1 cup almonds (optional)
1 cup Cheese of your choice (I use 3 cheese blend, originally white cheddar)
1 cup bread crumbs
2 tbsp butter
1 tbsp salt

Cook egg noodles on stovetop, boil roughly 10 minutes and drain. Add butter and salt well.
In a large bowl, mix vegetables, soup, milk, tuna, mayo and nuts (optional). When noodles are complete, mix into bowl with the mixture you have.
Spread mixture evenly into baking dish. Add either shredded or small block cheese on top of mixture in dish. Then evenly distribute bread crumbs on top of cheese.
Cover w/ foil and bake 350 friend for 1 hour on middle oven rack.

Cheesecake Factory Bruschetta


1−1/2 cups chopped Roma tomatoes
2 Tbsp.diced red onion
1 large clove garlic, minced
2 Tbsp. Chopped fresh basil
2 tbsp. Olive oil
1/2 tsp. Red wine vinegar
1/4 tsp. Salt
Dash of ground black pepper
1/2 loaf French baguette or crusty Italian bread, sliced into 5−7 slices
1/4 tsp. Garlic salt
2−3 sprigs Italian parsley

In a medium bowl, combine tomatoes, onion, garlic and basil. Add 1/2 Tbsp.
Of oil, vinegar, salt and pepper and mix well. Cover bowl and refrigerate
for at least an hour.

Preheat broiler, slice the bread in 1" slices
Diagonally to make 5−7 slices. Combine remaining 1 1/2 Tbsp. Oil with the
Garlic salt. Brush entire surface of each slice (both sides) with the olive
Oil mixture.

Broil slices for 1 1/2−2 mins. On each side, until surface
Starts to brown. Arrange bread like spokes of a wheel on plate. Put the
Chilled tomato mixture in a pile in the middle of the slices. Garnish with
Italian parsley.

I had this at Cheesecake factory last night and it was sooooo good I had to come home and look up the recipe.

Cheesecake Factory Miso salmon
½ cup red miso
¾ cup sake
¾ cup brown sugar
1 tablespoon rice vinegar
1 tablespoon soy sauce
1 teaspoon minced garlic
¼ teaspoon minced ginger
4 Salmon fillets, 8oz each

Sake butter sauce
1 cup sake
1 tablespoon minced ginger
½ cup butter
2 tablespoons flour
1 cup heavy cream
¼ teaspoon salt
6 cups cooked white rice

Combine marinade ingredients in a saucepan and bring to a boil. Reduce heat and simmer for 20 minutes. Strain marinade when done to filter our chunks of garlic and ginger. When cool, pour ¼ cup of marinade over the four filets in a resealable bag and chill for 4-6 hours. Keep the rest of the marinade in the fridge as well.

Preheat oven 425 degrees. Remove fish from bag (discard rest of that marinade) and place on baking sheet for 20-22 minutes.

Make sake butter by combining sake, and ginger in saucepan. Reduce over medium/low heat for 10-12 minutes or until reduced by half. Pour mixture through strainer. In another pan, melt butter and whisk in flour – once this begins to bubble, whisk in cream. Keep stirring the sauce as it cooks for another minute, then add reduced sake and salt. Butter a ramekin and press 1 ½ cup rice into dish and flip over on plate, then place salmon on top and garnish with sake butter.
