Salmon Cakes

Ingredients:
1 can (15 1/2 oz. size) red salmon, flaked
1 cup soft fresh bread crumbs
1/4 cup chopped green onion
1 egg, slightly beaten
2 tablespoons fresh lemon juice
1 teaspoon Worcestershire sauce
Directions:
Preheat oven to hot (400 degrees). Spray cookie sheet with non-stick vegetable cooking spray or use a non-stick cookie sheet.
Combine salmon, bread crumbs, green onion, egg, lemon juice, and Worcestershire sauce in medium size bowl; stir well.
Shape mixture into 4 equal patties. Place on cookie sheet. Bake in preheated oven (400 degrees) for 7 or 8 minutes on each side or until golden and cooked through. Patties can be made ahead of time and refrigerated before cooking.

Extremely Easy Peach Cobbler Crumb Cake


[SIZE=-1]1 (16 oz.) can of peaches in light syrup [/SIZE]
[SIZE=-1]1 box yellow cake mix [/SIZE]
1 stick of butter


InstructionsPour peaches and syrup in 8 x 8 cake pan. Sprinkle cake mix over peaches. Top with butter slices. Bake at 350 degrees until golden brown. Serve with Cool Whip or alone.

BBQ Chicken (Crockpot)


Ingredients:
3 pounds Frying Chicken, Cut Up
1 can Tomato Soup, Condensed
3/4 cup Onion, Chopped
1/4 cup vinegar
3 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon sweet basil
1/4 teaspoon thyme Directions:
Place chicken in crock pot. Combine all other ingredients and pour over chicken. Cover and cook on low for 6 to 8 hours.

Chile-Rice Casserole

3 cups white rice, cooked
1 cup cheddar cheese, shredded
1/2 cup onions, chopped
1 (19 ounce) can chili
3/4 cup Fritos corn chips, crushed
  1. Preheat oven to 375 degrees.
  2. In a saucepan, heat chili until warm.
  3. Spray a 9x13 casserole dish with non-stick spray and spread rice in even layer on the bottom of the dish.
  4. Top rice with 1/2 cup cheese, 1/4 cup onion and then chili.
  5. Top that with remaining 1/2 cup cheese, 1/4 cup onion, and crushed fritos.
  6. Bake 25-30 minutes, or until cheese is melted.

Recipe for a Happy New Year........

Take 12 fine, full-grown months; see that these are thoroughly cleansed from all old memories of bitterness, hate, and jealousy.

Cut these months into 30 or 31 equal parts. (This batch will keep for one year. Do not attempt to make more than one batch at a time-many people spoil the entire lot in this way.)

Into each day, put 12 parts of faith, 11 of patience, 10 of courage, nine of work (some people omit this ingredient and spoil the flavor of the rest), eight of hope, seven of fidelity, six of open-mindedness, five of kindness, four of rest (leaving this out is like leaving the oil out of the salad-don't do it ), three of prayer, two of meditation, and one of well-selected resolution.

If you have no conscientious scruples, add a teaspoonful of good spirits, a dash of fun, a pinch of folly, a sprinkling of play, and a heaping cupful of good humor.

Pour love liberally into the whole, and mix with strength. Cook thoroughly in a warming heat. Garnish with a few smiles and a sprig of joy; then serve with quietness, unselfishness, and cheerfulness...and a Happy New Year is a certainty.

Berry Smoothie

Ingredients
1/2 cup orange juice
2-3 small scoops of fruit-flavored sherbert (orange and raspberry are my favorites)
1 1/2 cups frozen mixed berries, semi-thawed (I use a blend of strawberries, blackberries, blueberries and raspberries)
1 tsp. sugar or artificial sweetener (optional)
3-5 ice cubes, crushed

Directions
Place ingredients in blender in the order listed (starting with orange juice)
Blend until smooth.
Makes one 16 oz. smoothie.

Cream Cheese - Poppyseed Pound Cake

1 butter (no substitutes
8-ounce package cream cheese
6 eggs
3 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2-1/4 cups granulated sugar
1/4 cup poppy seed
2 teaspoons
vanilla

Lemon Icing
  1. Allow butter, cream cheese, and eggs to stand at room temperature for 30 minutes. Meanwhile, grease and lightly flour a 10-inch tube pan. Combine flour, baking powder, and salt. Set aside.
  2. In a large mixing bowl beat butter and cream cheese with an electric mixer on medium to high speed about 30 seconds or until softened. Gradually add sugar, 2 tablespoons at a time, beating on a medium speed about 5 minutes or until very light and fluffy. Add poppy seed and vanilla. Add eggs, one at a time, beating on low to medium speed 1 minute after each addition and scraping bowl frequently. Gradually add flour mixture, beating on low speed just until combined. Pour batter into prepared pan.
  3. Bake in a 325 degree friend oven about 1-1/4 hours or until a wooden toothpick inserted in center comes out clean. Cool in pan on wire rack 15 minutes. Remove from pan. Cool completely on wire rack. Drizzle Lemon Icing over cake. Makes 16 to 20 servings.
  4. Lemon Icing: </B>In a small mixing bowl stir together 1-1/2 cups sifted powdered sugar, 1/2 teaspoon finely shredded lemon peel, and 1 to 2 tablespoons lemon juice to make icing of a drizzling consistency.

Linguini with Parmesan Sauce

2 tsp.extra virgin olive oil

1 tbsp.flour

1/2 tsp.salt

1/4 tsp.ground white pepper

3 cups1% low-fat milk

1 cupfreshly grated Parmigiano Reggiano cheese

1 (16 oz.) box BARILLA Linguine



HEAT oil, flour, salt and pepper in saucepan over medium-low heat for 5 minutes, stirring occasionally. In a separate saucepan bring milk to a boil.
ADD milk gradually to flour mixture, stirring until smooth. Heat to boiling, stirring constantly. Reduce heat to medium and simmer 3 minutes, stirring constantly. Add cheese and whisk until cheese is thoroughly mixed.
COOK Linguine according to package directions; drain and return to pot.
ADD sauce to hot Linguine and toss. Transfer to serving platter and serve immediately.

Creamy Orange Dip

Ingredients:
1 package (8 oz size) soft cream cheese
1 jar (7 oz. size) marshmallow cream
1 tablespoon grated orange rind zest
1 tablespoon frozen orange juice concentrate
1 tablespoon Grand Marnier or other orange-flavored liqueur
Directions:
Combine cream cheese and marshmallow cream.
Beat till smooth. Stir in rest of ingredients. Cover and chill 1-2 hours. Serve with assorted fresh fruit.

Silver Dollar Pancakes (Kids love 'em)

1/2 cup all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup milk
1 egg, slightly beaten
1/2 cup mashed ripe banana
Sifted powdered sugar
Preparation
Prep: 10 minutes, Cook: 1 minute
  1. In a mixing bowl combine flour, granulated sugar, baking powder, salt, and cinnamon. In another mixing bowl combine milk, egg, and banana. Add to flour mixture. Stir just until combined but still slightly lumpy.
  2. Heat a lightly greased griddle or heavy skillet over medium heat until a few drops of water dance across the surface. For each pancake, spoon a scant 1 tablespoon batter onto the hot griddle.
  3. Cook over medium heat until pancakes are golden brown, turning to cook the second sides when pancake surfaces are bubbly and edges are slightly dry (about 1/2 to 1 minute per side.)
  4. Serve immediately or keep warm in a loosely covered ovenproof dish in a 300 degree friend oven. If desired, serve with powdered sugar.

Old-Fashioned Potato Salad
Ingredients
  • 4 pounds boiling or all-purpose potatoes, peeled, cut in chunks
  • 1 3/4 teaspoons salt, divided
  • 1 cup mayonnaise or salad dressing
  • 1/2 cup sweet-pickle relish
  • 1/4 cup diced onion
  • 1 teaspoon whole celery seed
  • 1 teaspoon dry mustard
  • 1/4 teaspoon freshly ground pepper
  • 6 large hard-cooked eggs, chopped
  • Paprika (optional)
Preparation
Combine potatoes with just enough water to cover and 1 1/2 teaspoons salt in large saucepot, then cover and bring to boil. Cook until fork-tender, 25 to 30 minutes. Drain potatoes and cool completely.
Combine mayonnaise, relish, onion, celery seed, mustard, pepper and 1/4 teaspoon salt in large bowl.
Cube potatoes; add to bowl with eggs and toss.
Cover and refrigerate until ready to serve. Sprinkle top with paprika.

Beef Penne Casserole
1 pound dried penne pasta prepared according to package directions
8 ounces lean ground beef
1 small onion chopped
2 cups water
2 (6 ounces each) cans Italian tomato paste
1/3 cup red wine or water
1 tablespoon MAGGI granulated Instant Beef Flavor Bouillon
2 (8 ounces) cups shredded Monterey Jack cheese

PREHEAT oven to 350 friend.

COOK beef and onion in large saucepan, stirring occasionally, until beef is no longer pink. Add water, tomato paste, wine and bouillon; cook, stirring occasionally, for 10 to 15 minutes or until flavors are blended.

LAYER ingredients as follows in ungreased 13 x 9-inch baking dish: 1/2 pasta, 1/2 sauce and 1/2 cheese. Repeat layers; cover.

BAKE for 20 to 25 minutes or until heated through and cheese is melted. Season with salt.

Tropical Fruit Pops

You may think you're making this treat for kids, but as soon as the adults taste them all bets are off! Experiment with gelatin flavors to determine which you like best, or keep an assortment on hand for easy healthful snacking.
Ingredients

1/2 cup boiling water
1 4-serving-size package sugar-free lemon, mixed fruit, or strawberry-flavored gelatin
1 15-1/4-ounce can crushed pineapple (juice pack)
2 medium bananas, cut into chunks
Preparation
Freeze: 6 hours, Prep: 15 minutes
  1. In a 1- or 2-cup glass measure stir together boiling water and gelatin until gelatin dissolves. Pour into a blender container. Add undrained pineapple and banana chunks. Cover and blend until smooth.
  2. Pour a scant 1/2 cup of the fruit mixture into each of eight 5- to 6-ounce paper or plastic drink cups. (Or pour a scant 1/3 cup into each of twelve 3-ounce cups.) Cover each cup with foil. Using the tip of a knife, make a small hole in the foil over each cup. Insert a wooden stick into the cup through the hole. Freeze about 6 hours or until firm.
  3. To serve, quickly dip the cups in warm water to slightly soften fruit mixture. Remove foil and loosen sides of pops from drink cups. Tear off the paper. Makes 8 to 12 pops.

Crispy Chicken with Rosemary & Fries

8 chicken thighs
6 small red potatoes, quartered
1/2 cup extra-virgin olive oil, or as needed
1 tablespoon chopped fresh rosemary
1 1/2 teaspoons chopped fresh oregano
1 1/2 teaspoons garlic powder
salt and pepper to taste

Place chicken and potatoes into a large bowl. Pour olive oil over them, and stir to coat. Scatter the chicken and potato pieces in a large baking dish, or cookie sheet with sides. Sprinkle with rosemary, oregano, garlic powder, salt and pepper.

Monkey Bread

1/2 cup butter (no diet)
1/3 cup granulated sugar
1/3 cup brown sugar
1/4 cup finely chopped nuts
1 Tbls. cinnamon
3 cans buttermilk biscuits

Preheat oven to 375 degrees. Spray the inside of a bundt pan with Pam. Melt the butter. Mix the sugar, brown sugar, nuts and cinnamon in a separate bowl.

Open the biscuits, separate and cut each biscuit into four sections. Roll each section into a ball and put into the sugar mixture to coat.

Place the balls into the pan and drizzle a little butter evenly over the top of the first layer, which is one can of the biscuits. Repeat until all 3 cans of biscuits are used.

Sprinkle remaining sugar mixture over the top and bake for 30-35 minutes. Let cool for a minute or two before turning upside down onto a plate and removing the pan. If you leave it in the pan too long, it will stick there.

Hungarian Mushroom Soup


INGREDIENTS:

* 4 tablespoons unsalted butter
* 2 cups chopped onions
* 1 pound fresh mushrooms, sliced
* 2 teaspoons dried dill weed
* 1 tablespoon paprika
* 1 tablespoon soy sauce
* 2 cups chicken broth
* 1 cup milk
* 3 tablespoons all-purpose flour
* 1 teaspoon salt
* ground black pepper to taste
* 2 teaspoons lemon juice
* 1/4 cup chopped fresh parsley
* 1/2 cup sour cream

DIRECTIONS:

1. Melt the butter in a large pot over medium heat. Saute the onions in the butter for 5 minutes. Add the mushrooms and saute for 5 more minutes. Stir in the dill, paprika, soy sauce and broth. Reduce heat to low, cover, and simmer for 15 minutes.
2. In a separate small bowl, whisk the milk and flour together. Pour this into the soup and stir well to blend. Cover and simmer for 15 more minutes, stirring occasionally.
3. Finally, stir in the salt, ground black pepper, lemon juice, parsley and sour cream. Mix together and allow to heat through over low heat, about 3 to 5 minutes. Do not boil. Serve immediately.

Coconut-Corn Flake Squares


Ingredients:
1/2 cup butter, cut up
1/2 cup granulated sugar
1 cup all-purpose flour
3/4 cup corn flakes
1 1/2 cup shredded coconut
1/3 cup confectioners' sugar
Directions:
Preheat the oven to 400?friend. Set out a 9&shy; inch square baking pan.
Melt the butter with the sugar in a medium saucepan over low heat. Stir in the flour, corn flakes, and 1 cup coconut until well coated. Firmly press the mixture into the pan. Bake for 10-15 minutes, or until just golden. Dust with the confectioners' sugar and the remaining 1/2 cup coconut. Cool completely before cutting into squares.

More honey do you have any nice recipes for a new york style cheese cake. I had one years ago that involved cream cheese , suger, heavy cream and gram cracker crust but lost it. I love a drier style cheesecake. Most of the store boughts (including cheesecake factory) are close but not quite there. thanks.

New York Style Cheesecake


Very rich with whipping cream and sour cream.
12 servings

1 hour 50 minutes 20 mins prep</B>

CRUST
3 1/2 cups graham cracker crumbs
1 tablespoon cinnamon
1/4 cup melted butter
FILLING

5 (250 g) packages cream cheese, at room temperature
2 cups sugar
1 1/2 cups heavy cream
2 tablespoons lemon juice
1 tablespoon vanilla
4 eggs, at room temperature
1 1/2 cups sour cream
  1. CRUST: Combine crust ingredients.
  2. Press into bottom and sides of 10-inch springform pan.
  3. Chill.
  4. Preheat oven to 325 friend.
  5. FILLING: Beat cream cheese and sugar until smooth.
  6. Add cream, lemon juice and vanilla; beat until well blended.
  7. Add the eggs, one at a time, beating well after each addition.
  8. Stir in sour cream.
  9. Pour mixture into prepared shell and bake in oven until center is just set, about 90 minutes.
  10. Turn off oven and prop door open slightly.
  11. After about 30 minutes, transfer to a rack to cool.
  12. Chill overnight.
  13. Serve with fresh fruit or a fruit sauce.
  14. 12-14 servings.
