For The Big Game....

Ultimate Seven Layer Dip
1 can (16 oz.) Refried Beans
1 Tbsp. Taco Seasoning Mix
1 cup Sour Cream
1 cup Thick 'N Chunky Salsa
1 cup shredded lettuce
1 cup KRAFT Mexican Style Shredded Cheese
1/2 cup sliced green onions
2 Tbsp. sliced pitted ripe olives
RITZ Chips Original or WHEAT THINS Baked Snack Crackers

MIX beans and taco seasoning mix. Spread onto bottom of 9-inch pie plate or quiche dish.
LAYER all remaining ingredients except chips over bean mixture; cover. Refrigerate several hours or until chilled.
SERVE with chips.

Velveeta/Salsa Dip

1 lb. (16 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up
1 cup Thick 'N Chunky Salsa

MIX VELVEETA and salsa in 1-1/2-quart microwavable bowl. Microwave on HIGH 5 minutes or until VELVEETA is melted, stirring after 3 minutes. SERVE hot with assorted cut-up vegetables, WHEAT THINS Snack Crackers or tortilla chips.

Easy Caramel Popcorn

1 pkg. (14 oz.) KRAFT Caramels (about 50)
3 Tbsp. butter or margarine
12 cups air-popped popcorn
1 cup PLANTERS COCKTAIL Peanuts

PREHEAT oven to 300?friend. Place caramels, butter and 1 Tbsp. water in large heavy saucepan; cook on low heat until caramels are completely melted, stirring frequently.
COMBINE popcorn and peanuts in large bowl. Add caramel mixture; toss to evenly coat. Spread onto large greased baking sheet.
BAKE 10 min.; stir. Bake an additional 10 min. Spoon onto sheet of wax paper; cool completely. Break apart into clusters.

Biltmore Estate Chicken

4 boneless skinless chicken breasts
6 tablespoons fresh lemon juice
1/4 cup olive oil
2 teaspoons minced garlic
salt and pepper (to season)
1/4 cup chopped onions
1 1/2 cups heavy cream
4 fresh sage leaves (optional, I don't use them)
1/4 cup chopped fresh parsley
12 ounces rigatoni pasta
1/3 cup flour
1/4 cup dry white wine or apple juice
1 cup crumbled gorgonzola
1/2 cup fresh grated parmesan cheese
2 tablespoons minced parsley (to garnish)
  1. Pound the chicken out till evenly flattened.
  2. Marinate the chicken in the lemon juice, 1 Tolive oil, 1 t garlic, and salt and pepper for no more than 2 hours in a glass or ceramic dish.
  3. To make the sauce.
  4. saute the onions and remaining garlic ( I use more ) in 1T oil till tender.
  5. Add the cream and bring to a boil, add the sage and parsley and remove from heat.
  6. Boil the pasta in salted water till done and set aside to completly drain.
  7. Remove the chicken from the marinade and shake off the excess oil. Dip in the flour that has been seasoned with salt and pepper, coating both sides. Fry in the remaining olive oil browning both sides and cooking approx 5 minutes per side or till juices run clear and it is cooked thru.
  8. Remove the chicken to a plate and in the hot pan add the apple juice or wine and cook till approx 2 T of liquid remain.
  9. Add the cream mixtureand bring to a boil.
  10. Then add the cheeses and bring to a simmer seasoning with salt and pepper to taste.
  11. Mix half of the sauce in a large bowl with the drained noodles. Place the noodles evenly on 4 plates top each with a chicken breast and drissel the remaining sauce evenly over the 4 chicken breasts.
  12. Garnish with parsley.

Crock Pot Sloppy Joes


3 lbs. ground beef

1 C. onions diced
1 C. celery diced
1 C. green pepper diced
1 1/2 C. ketchup
2 T. Worcestershire sauce
16 oz. can tomato paste
3/4 C. water
1/2 t. paprika
3 T. vinegar
3 T. brown sugar
1 t. dry mustard
salt and pepper
Brown ground beef in a skillet and break up into small pieces. Add to crockpot. Add the rest of the ingredients and mix well. Turn on low and cook for 8 hours. Serve on hamburger buns.

Really Big Pancake

1/2 stick butter (4 Tbls.)
1/2 cup flour
1/2 cup milk
2 eggs
pinch of nutmeg

Preheat oven to 400 degrees. Put butter in a 10" square pan and melt in oven.
In a bowl, mix flour, milk, eggs and nutmeg taking care not to overmix (some lumps are ok)
Pour batter into pan with melted butter.
Bake for 15 mins. It will puff up and brown.
Serve with a sprinkling of powdered sugar or syrup if desired.

BROCCOLI CHICKEN CASSEROLE
1 can cream of mushroom soup
1 cup shredded sharp or medium cheddar cheese
1 cup mayonnaise
2 tablespoons grated onion
3 double chicken breasts, cooked and boned
2 packages frozen broccoli, thawed
1/4 to 1/2 cup shredded sharp or medium cheddar cheese for topping Combine soup, cheese, mayonnaise and onion in a bowl. Cut chicken in strips or cubes and spread it on the bottom of a 9-by-11-inch casserole dish. Top with broccoli. Pour sauce mixture over chicken and broccoli. Sprinkle more shredded cheese over the top.
Bake at 375 degrees for about 20 minutes or until cheese is melted and sauce is bubbly. ? Ivy Peterson, North Salt Lake

Linguini Romano

  • 8 oz. Linguine, uncooked
  • 2 tablespoons butter or margarine
  • 1 cup chopped ham or prosciutto
  • 3 cups (about 8 oz.) thinly sliced fresh mushrooms
  • 1-1/2 cups light cream
  • 1-3/4 cups (10-oz. pkg.) frozen peas, thawed
  • 1/2 cup grated Romano or Parmesan cheese
  • Grated Romano or Parmesan cheese (optional)
Instructions:
Cook pasta according to package directions; drain. Meanwhile, in large skillet over medium heat, melt butter. Add ham and mushrooms; cook 3 to 5 minutes or until tender. Add light cream. Heat to boiling; reduce heat. Cook 6 minutes or until liquid is reduced by half. Add peas. Toss with hot pasta and Romano cheese. Serve with additional cheese, if desired. 6 servings (1 cup each).

Made the Red Potato Crock pot recipe Sunday for a super bowl potlock and it was awesome!!!! I doubled the ingredients and since I live above 4800 feet I added 6 oz of cream and a couple shots of Wild Turkey!!:chef:

Penne Ala Parma


2-2/3 cups (8 oz.) Penne Rigate, uncooked
  • 2 tablespoons butter or margarine
  • 2 cloves garlic, minced
  • 1-1/2 cups (about 4 oz.) thinly sliced fresh mushrooms
  • 3/4 cup (about 2 oz.) prosciutto, sliced into thin strips (or substitute very thinly sliced smoked ham).
  • 1 cup milk
  • 1/2 cup light cream
  • 1/4 cup grated Parmesan cheese, divided
  • 1/4 cup chopped fresh parsley
Instructions:
In large skillet over medium heat, melt butter; add garlic and mushrooms. Cook 3 minutes or until mushrooms are tender, stirring frequently. Add prosciutto, milk and cream; heat to boiling. Reduce heat to medium; simmer, uncovered, until mixture is reduced by half, about 6 minutes. Meanwhile, cook pasta according to package directions. Drain. Remove sauce from heat; add 3 tablespoons Parmesan cheese and parsley. Toss hot pasta and sauce; sprinkle with remaining cheese. 4 servings (about 1 cup each).

WHITE SALSA

INGREDIENTS:
1 cup sour cream
1 cup mayonnaise
juice from 3 limes
4 cloves garlic, crushed
1 1/2 cups finely chopped cilantro
6-ounce can black olives (pitted), drained and chopped
1 1/2 cups green onions, finely chopped
5 teaspoons hot pepper sauce
pepper to taste
DIRECTIONS:
In a medium bowl, combine mayonnaise and sour cream, mixing
well. Add lime juice, garlic, cilantro, black olives,
scallions, hot pepper sauce, salt and pepper. Taste and
adjust seasonings for personal preference. Refrigerate for
2 hours before serving to allow flavors to blend. Serve with
tortilla chips

Cheesy Chicken Legs

4 chicken legs
1/4 cup butter or margarine, melted
1 large ziploc bag
1/2 cup dry breadcrumbs
1/4 cup parmesan cheese, grated
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon pepper
  1. Preheat the oven to 375?friend.
  2. In the Ziploc bag, combine the bread crumbs, parmesan, salt, pepper, paprika and garlic powder.
  3. Dip each chicken piece singly, into the melted butter, then drop singly, into the crumb mix in the Ziploc bag and shake well to coat.
  4. Place each coated chicken piece together on an UNgreased cookie sheet.
  5. Bake in the preheated 375?friend oven for 1 hour or until the chicken is 170? and the juices run clear.
  6. Variations: This is a hugely versatile recipe, where seasonings are interchangeable depending on the type of cuisine you're aiming for.

Weightwatcher's BLT Pasta Salad

3 2/3 cups cooked large macaroni shells
4 cups tomatoes, cut up
4 slices bacon, cooked and crumbled
3 cups of thin sliced lettuce
1 teaspoon sugar
2 teaspoons cider vinegar
1/2 cup fat-free mayonnaise
1/3 cup light sour cream
1 tablespoon Dijon mustard
salt and pepper
  1. In a large bowl mix together shell, bacon, tomatoes, and lettuce.
  2. In a small bowl mix the sugar, vinegar, mayo, sour cream and mustard, salt and pepper to taste.
  3. Pour over shell mixture, stir and chill.

Layered Cabbage Dish

1/2 cabbage chopped
3/4 lb. ground beef
1/4 lb. sausage (I used Jimmy Dean hot)
1/2 small onion chopped
1/4 cup chopped green pepper
1 tsp. chili powder
1/2 tsp. salt
fresh ground pepper
1/3 cup rice (not cooked)
2 cans tomato soup
1 soupcan of water
1 Tbls. brown sugar

Spray Pam on a 3-4 qt. casserole....not metal. Lay chopped cabbage in the bottom. Brown the beef, sausage, onion & green pepper. Drain. Add the seasonings and rice to meat mixture. Mix well. Spread over the cabbage. Mix together soup, water and brown sugar and pour over the beef & cabbage. Cover & bake for 90 mins. at 350.

If it ever looks too dry, just add a little V-8 juice.

Ultimate Twice Baked Potato

Ingredients:
4 large baking potatoes
8 slices bacon
1 cup sour cream
1/2 cup milk
4 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup Cheddar cheese, shredded; divided use
8 green onions, sliced, divided use
Directions:
Preheat oven to 350 degrees friend. Bake potatoes for 1 hour.
Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl, being careful not to tear skins; set potato skins aside. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon. Bake for another 15 minutes.

Baked Brie With Strawberries


Ingredients:
1 1/2 pound round loaf whole grain bread -- unsliced
2 pounds wheel Brie cheese
1 pint fresh strawberries

Directions:
Slice off top 1/2 inch of bread loaf; scoop out center leaving 1-inch shell.
Place cheese in center; wrap in foil.
Bake at 350 degrees for 30 minutes or until heated through.
Arrange strawberries around top and outside of loaf. Cut into wedges and serve.

Ribs Diablo from The Biltmore Hotel, Los Angeles

7 lb. pork ribs, or 10 lb. beef back ribs
1 medium onion, minced
2 cloves garlic, minced
1 T. margarine
1 1/2 cup catsup
1/3 cup bottled steak sauce (A-1, etc.)
3/4 cup honey
1 T. Worcestershire
8 oz beer
1 T. seasoned salt
1 T. Tabasco sauce

Boil ribs in water to cover 1 hour. Meanwhile, saut*nion and garlic
lightly in butter. Add catsup, steak sauce, honey, Worcestershire, beer,
seasoned salt, and Tabasco. Bring to boil. Reduce heat, and simmer 30
minutes. Drain ribs and bake at 350 for 30 to 40 minutes or until brown.
Baste often with sauce the last 15 minutes of cooking until glazed. Serves 6

Seaside Shortcakes

1 (10 1/4 ounce) can Pillsbury Grands refrigerated buttermilk biscuits
1/3 cup dry white wine
1 (8 ounce) container cream cheese with chives and onions
1 (16 ounce) jar alfredo sauce
1 cup baby peas
1/2 lb shelled deveined and cooked medium shrimp
1 (6 ounce) container crabmeat, drained
1/2 cup shredded parmesan cheese
1/4 cup chopped chives
3 tablespoons chopped pimiento, pieces (not roasted or fresh) (optional)
Heat oven to 375F.
  1. Prepare and bake biscuits as directed on pkg.
  2. Meanwhle, cook wine in large skillet over high heat(3-5 min) or until slightly reduced.
  3. Reduce heat to medium.
  4. Add Alfredo sauce, cream cheese, peas, shrimp and crabmeat; mix well.
  5. Cook 8-10 min or until sauce is smooth and peas are tender, stirring occasionally.
  6. Add pimento pieces, if using.
  7. Split each warm biscuit.
  8. Place bottom halves on individual serving plates.
  9. Spoon half of seafood mixture over biscuits.
  10. Cover with biscuit tops.
  11. Top with remaining seafood mixture.
  12. Sprinkle with cheese and chives.

TACO OVEN-FRIED CHICKEN

1/2 cup fat free milk
1 Tbls. spicy brown mustard
1 tsp. soy sauce
1/2 tsp. hot pepper sauce
1/2 tsp. Worchestershire sauce
1 clove garlic minced
1/2 cup flour
1 Tbls. taco seasoning
1/2 tsp. salt
1/2 tsp. pepper
4 bonelass skinless chicken breasts

In a shallow bowl, combine the first 6 ingredients. In another shallow bowl, combine flour, taco seasoning, salt and pepper. Dip chicken in milk mixture, then roll in flour mixture.

Place chicken in 15x10x1 inch baking pan coated with Pam. Bake uncovered at 350 degrees for 35-40 mins or until juices run clear.

CROCKPOT CHICKEN WINGS

12-18 chicken wings
1/3 cup soy sauce
1 tsp. ginger, minced
2 cloves garlic, minced
1 onion, diced
1 Tbls. honey
2 tsps. oil

Combine ingredients in the crockpot. Cook on low 6-8 hours.
