Hungarian Goulash

3 cups chopped onions
1 1/2 cups coarsely chopped sweet green peppers
2 tablespoons minced garlic
3 lbs beef stew meat, cut into 1-inch pieces
1 (6 ounce) can tomato paste
1/2 cup water
4 teaspoons paprika
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 cups hot cooked noodles
1/2 cup sour cream
Combine all ingredients in a 3 1/2- or 4-quart slow cooker.
  1. Mix well.
  2. Cover; cook on low-heat setting for 10 to 12 hours or on high-heat setting for 5-6 hours.
  3. Serve over hot cooked noodles.
  4. Add sour cream to juices, thicken.
  5. Season to taste with more salt and freshly ground pepper.

Stovetop Rice Pudding

2 cups water
1/4 tsp. salt
1 cup med. grain rice
2 1/2 cups whole milk
2 1/2 cups half and half
2/3 cup sugar
1 1/4 tsps. vanilla extract

Bring water to boil in heavy-bottomed saucepan (at least 3 qt.) Stir in salt and rice; cover and simmer over low heat stirring once or twice 'til water is almost fully absorbed...15-20 mins.

Add milk, half-and-half and sugar. Increase heat to med-high and bring to a simmer, then reduce heat to maintain a simmer. Cook uncovered and stirring frequently 'til mixture starts to thicken about 30 mins. Reduce heat to low and continue to cook stirring every couple mins. to prevent scorching,'til spoon stands up in pudding, about 15 mins. lomger.


Remove from heat and stir in vanilla. Cool and serve at room temp. or chilled. Can be covered with plastic wrap - put directly on surface of pudding- and refrigerate up to 2 days.

Variation: when adding vanilla, add 1 tsp. of ground cinnamon.

Chicken Extraordinaire
For Two

Ingredients:
2 boneless skinless chicken breast
1/4 cup cream cheese -- softened
1/4 teaspoon garlic powder
1/2 teaspoon dried dill weed
2 slices bacon
1 cup white cooking wine or chicken broth
Directions:
Preheat oven to 350F. Pound out chicken breasts until evenly flat.
In a small bowl, combine cream cheese, garlic powder, and dill weed.
Place half of cream-cheese mixture in the center of a chicken breast. Roll up chicken breast to cover cream cheese and wrap a piece of bacon around each chicken breast. Repeat for remaining chicken breast. Place prepared chicken breasts in a 1-quart baking dish. Add wine or chicken broth. Cover and bake for 30 minutes. Uncover and bake for 10 to 15 minutes to brown bacon.

Oat Bran Applesauce Muffins

1 1/4 cups oat bran
1 cup oatmeal
1 1/4 cups all-purpose flour
1/2 cup brown sugar
1 teaspoon cinnamon
3 teaspoons baking powder
1/2 cup egg substitute, lightly beaten
1 cup skim milk
2 tablespoons canola oil
1 cup chunky applesauce

Combine oat bran, oatmeal, flour, brown sugar, cinnamon, and baking powder.
  1. In a separate bowl, combine egg substitute, milk, canola oil, and applesauce.
  2. Mix moist and dry ingredients together.
  3. Spoon into 18 muffin tins sprayed with nonstick spray.
  4. Optional: Sprinkle each muffin with a cinnamon and sugar mixture before baking.
  5. Bake in preheated 375 degree oven for approximately 20 minutes or until browned.

Charred Chicken & Peppers Fajitas
(from Eating Light)

2 large chicken breasts boneless & skinless cut into strips 1 1/2"
1 yellow pepper cut lengthwise in 1" strips
1 red pepper cut lengthwise in 1" strips
1 red onion thickly sliced
1/2 tsp dried oregano
1/4 tsp. crushed chili pepper
1 Tbls. vegetable oil
grated zest & juice of 1 lime (extra lime for serving)
1/8 tsp. salt
Freshly ground black pepper to taste
2 flour tortillas (6")
leafy salad
1 (8oz.) container nonfat Greek yogurt

Place chicken, peppers, onion, oregano, chili pepper, oil, lime zest and juice in large bowl; add salt & pepper and toss 'til well mixed.
Heat a flat griddle or heavy nonstick frying pan . Add chicken mixture and cook over high heat for about 8 mins. turning once or twice until mixture is well browned, lightly chareed and cooked through.

Warm tortilla in a dry frying pan for a few seconds. Put chicken mixture in tortillas add leafy salad and a squeeze of lime and dollop of yogurt.

Chicken Burrito Bundles

2 cups chopped cooked chicken
1 (1 1/4 oz) pkg. taco seasoning mix
1 (16oz) can refried beans
6 (8") Flour tortillas
1 (8oz.) pkg. shredded sharp cheddar cheese
3 plum tomatoes, diced
1 small onion, diced
salsa

1. Preheat oven to 350 degrees. Place chicken and seasoning mix in a large heavy duty zip top plastic bag. Seal and shake to coat.
2. Spread beans down center of tortillas. Top with chicken, cheese, tomatoes and onion. Roll up. Wrap each in foil. Bake at 350 for 15 minutes. Serve with salsa.

NOTE: To make this really easy, buy a whole deli chicken and strip off the meat.

Crispy Ranch Oven-Fried Chicken Breasts


[SIZE=-1]1 cup Seasoned Bread Crumbs [/SIZE]
[SIZE=-1]1/2 cup Hidden Valley Ranch Salad Dressing [/SIZE]
[SIZE=-1]1/4 cup Instant Oatmeal [/SIZE]
[SIZE=-1]4 Chicken Breasts skinless/boneless[/SIZE]
[SIZE=-1]1/4 cup Parmesan Cheese grated[/SIZE]

InstructionsPreheat oven to 350.
Mix bread crumbs, oatmeal and parmesan cheese in medium bowl. In a separate bowl, coat chicken breasts in salad dressing and then dredge chicken through bread crumb mixture evenly coating both sides. Place breaded chicken breasts in baking pan and sprinkle with additional parmesan cheese if desired. Bake at 350 for 30 minutes.

Creamy Crock Pot Red Potatoes
This crock pot potato recipe can easily be doubled and is great for potlucks. You can definitely please a crowd with this rich and creamy potato side dish. Don't worry about leftovers from this easy crock pot casserole recipe, there won't be any!​
  • 2 pounds small red potatoes, washed and quartered
  • 1 package (8 ounces) cream cheese, softened
  • 1 can (10-3/4 ounces) condensed cream of potato soup, undiluted
  • 1 envelope ranch salad dressing mix
Place potatoes in a crock pot. In a small mixing bowl, beat cream cheese, soup and salad dressing mix until blended. Stir into potatoes. Cover and cook on low for 8 hours or until potatoes are tender.
Serves 4 - 6​

Banana Cream-Crunch Pie

1 (3.4oz.) pkg. banana cream instant pudding mix
1 cup milk
5 Tbls. coffee liqueur, divided
1 (8oz.) container CoolWhip, thawed and divided
2 bananas, sliced
1 (6oz.) chocolate graham cracker pie crust
3 (1.4oz.) toffee candy bars, chopped (Heath Bars)

Combine pudding mix, milk and 4 Tbls. of liqueur in a med. bowl, stirring with a wire whisk until smooth. Gently fold 1 cup of Cool Whip into pudding mixture.

Toss banana slices with remaining 1 Tbls. liqueur and arrange over crust. Sprinkle with half of chopped candy. Spoon pudding mixture over chopped candy. Cover & chill 1 1/2 hrs. or 'til set. Spoon remaining Cool Whip on top of pie just before serving. Sprinlke with remaining chopped candy.

Lemon Marinated Orange Roughy
Substitutes: Oreo Dory, Catfish, Haddock

1 lb. orange roughy

Marinate

3 Tbsp. lemon juice
1 clove garlic, crushed
1 Tbsp. brown sugar
1 tsp. finely chopped ginger root
1 Tbsp. oil
1/4 tsp. salt

Combine marinade ingredients, mix thoroughly. Pour over fillets
and marinate in refrigerator for 1 hour, turning once. Broil 4 to 5
inches from heat for 3 to 4 minutes on each side basting frequently
with marinade.

Carrot Cake
(from Eating Light)

1 1/4 cups whole wheat flour
2 1/2 tsp. baking powder
1 tsp. ground cinnamon
1 tsp. ground ginger
pinch of salt
1/2 cup raisins soaked overnight in 1/2 cup unsweetened orange juice.
4 med. carrots peeled and finely grated
1/2 cup light brown sugar
1 Tbls sunflower oil
2 med. egg whites at room temp.
3 1/2 oz. reduced-fat cream cheese beaten with 2 tsp. sifted powdered sugar

Heat oven to 325 degrees and place rack in center position. Lightly grease an 8x4 loaf pan and line it with parchment paper Sift flour, baking powder, cinnamon, ginger and salt into a large bowl. Stir in raisins with the juice, carrots sugar & oil and mix well. Beat egg whites 'til soft peaks form. Fold lightly, but thoroughly into carrot mixture using a spatula.

Pour batter into prepared pan and bake 75 mins. or 'til toothpick inserted comes out clean. Cool in pan on rack for 10 mins., then invert pan onto the rack and peel off parchment paper. When completley cooled, cut in half lengthwise and fill with sweetened cream cheese..

Applesauce Square

1 3/4 cups sifted flour, plus more for dusting
1 tsp. baking soda
1/2 tsp. salt
1 cup sugar
1/2 tsp. ground cloves
1/2 tsp. allspice
1 tsp. cinnamon
1/2 cup shortening, plus more for greasing pan
1 cup applesauce
1 egg
1/2 cup chopped raisins
1/2 cup chopped nuts

Sift flour, baking soda, salt, sugar, cloves, allspice and cinnamon into large bowl. Add shortening and applesauce. Mix to dampen flour, then beat 2 mins. at med. speed with electric mixer.

Add egg, raisins and chopped nuts and beat 1 min. more. Pour into greased & floured 8 inch square pan. Bake at 375 degrees about 50 mins.

Cool and dust with powdered sugar.

Heat oil in a medium skillet over medium heat, and saute the chicken thighs until browned. Remove from heat, drain, and arrange in a medium baking dish. Cover with the cider vinegar sauce mixture

Bake covered 45 minutes in the preheated oven, or until chicken is no longer pink and juices run clear

Peanut Butter Hazelnut Brownies

Chewy, soft and fudgy.


1 cup unsalted butter
2 cups sugar
2 teaspoons vanilla extract
4 large eggs
1 cup all-purpose flour
3/4 cup cocoa powder (non-alkalized)
1/2 teaspoon baking powder
Dash salt
1/2 cup smooth peanut butter
1/2 cup hazelnut-chocolate spread

Preheat the oven to 350 degrees friend. Grease a 9 by 13-inch glass baking dish.

Melt the butter over low heat; when melted remove from heat and stir in the sugar and vanilla. Add the eggs 1 at a time, beating after each addition. Add flour, cocoa, baking powder and salt, and mix well. Mix the peanut butter and chocolate spread in a small microwave-proof bowl, and heat in the microwave until it reaches a runny consistency. Stir the mixture into the batter; then pour it into the baking dish. Bake for 30 minutes. Allow to cool before cutting and serving.

Spicy Macaroni and Cheese

4 to 6 servings

1 package (8 ounces) elbow macaroni
4 cups (16 ounces) shredded Mexican cheese blend
1-1/2 cups milk
2 eggs
1/4 teaspoon black pepper
1 can (4-1/2 ounces) chopped green chilies, drained
1 cup coarsely crushed corn chips

Preheat the oven to 350?friend. Coat a 2-quart casserole dish with nonstick cooking spray.
  1. Heat the milk and add the cheese & melt
  2. Cook the macaroni according to the package directions; drain and place in a large bowl. Add all ingredients except the corn chips; mix well, then pour into the casserole dish and sprinkle with the corn chips.
  3. Bake for 30 to 35 minutes, or until hot and bubbly and the top is golden. Cut and serve.

EASY DANISH APPLE CAKE


1/4 c Butter or margarine
1 cup Sugar
1 Egg -- beaten
1 tsp. Vanilla extract
1 1/2 cup Flour
1 tsp. Baking soda
1/2 tsp. Cinnamon
2 cups Apples -- peeled & grated

-----TOPPING-----
1/4 cup Sugar
1/2 tsp. Cinnamon
1/2 c up Nuts -- chopped

Cream margarine and sugar. Add egg and vanilla,
beating well. Add flour, baking soda and cinnamon arld
blend well. Add grated apples and beat well by hand.
Pour into greased 9-by-9-inch pan.

Combine all topping ingredients and sprinkle on
batter. Bake at 350 degrees for 40 minutes.

Southwestern Stuffed Peppers (crockpot)

4 red or green bell peppers or mix of
1 (15oz.) black beans (rinsed & drained)
1 cup shredded jack cheese
3/4 cup med. salsa
1/2 cup frozen whole-kernel corn
1/2 cup chopped green onion
1/3 cup uncooked long grain converted rice
1 tsp chili powder
1/2 tsp. ground cumin
optional...sour cream

Cut thin slice off top of each pepper. Carefully remove seeds leaving the pepper whole. Combine beans, cheese, salsa, corn, green onions, rice, chili powder & cumin in a medium bowl. Spoon filling evenly into each pepper. Place peppers in slow cooker. Cover; cook on low 4-6 hours. Serve with sour cream if desired.

Bloomin' Brie Bowl

Ingredients:
1 1/2 teaspoons Chili Powder
1/2 teaspoon Ground Mustard
1/2 teaspoon Garlic Powder
1/2 teaspoon sugar
1 round sourdough bread (about 1 pound loaf)
1 tablespoon butter, softened
1 wheel (8 ounces) Brie cheese


Directions:
1. Preheat oven to 350?friend. Mix spices and sugar; set aside. Place bread on baking sheet. Cut circle in top of bread and remove bread center to make room for the wheel of Brie. 2. Spread butter on bread; sprinkle with 2 teaspoons of the spice mixture. With knife, make 2-inch cuts at 1-inch intervals around edge of bread. Remove rind from Brie and place in bread. Sprinkle Brie with remaining spice mixture. Replace top of bread
3. Bake 20-30 minutes. To serve, remove bread top and break into bite size pieces. Dip bread pieces in hot Brie.

FOR THE BIG GAME......

Wisconsin Wings

18 RITZ Crackers, finely crushed (about 3/4 cup crumbs)
1/3 cup KRAFT Shredded Parmesan Cheese
1 tsp. dried oregano leaves
1/2 tsp. garlic powder
1/2 tsp. paprika
1/8 tsp. coarse ground black pepper
2 lb. chicken wings, separated at joints, tips discarded
1/3 cup GREY POUPON Dijon Mustard

PREHEAT oven to 350?friend. Mix cracker crumbs, Parmesan cheese, oregano, garlic powder, paprika and pepper in shallow dish.
COAT chicken with mustard, then roll in crumb mixture until evenly coated. Place on greased baking sheet.
BAKE 35 to 40 minutes or until golden brown and cooked through, turning chicken over after 20 minutes. Serve warm.
